There’s a million different ways to cook eggs, but making omelettes has to be one of our favorites. It’s like a little egg burrito packed full of goodness! This Blackstone omelette is a favorite around here because it’s so easy and doesn’t take long to make.
Once you learn how to make an omelette on a Blackstone griddle, you’ll never go back to the hassle of a stovetop skillet. Making an omelette on the stovetop almost always ends in frustration, but making them on your outdoor griddle is so simple!

- Making an omelette on a Blackstone significantly reduces clean-up time! Just clean the griddle and wash the few mixing bowls and utensils you may have used. That’s it!
- This recipe makes 4 servings and you can easily double it to make extra.
- You need minimal ingredients and you likely already have the ingredients needed in your fridge and spice cabinet.
Ingredients needed to make a Blackstone Omelette
- Thick cut bacon – You don’t have to use thick cut, but it makes the BEST omelettes. Thick cut bacon tends to cook more evenly as well.
- Shredded cheddar cheese – For the best cheesy experience, shred your own cheddar cheese!
- Eggs – Large or extra large eggs will work best for this Blackstone omelet.
- Milk – I recommend using whole milk, but 2% milk or 1% milk will work just fine.
- Salt and pepper – You only a little dash of salt and pepper since there’s so much flavor provided by the bacon and cheese.
- Cooking oil – Either use cooking oil or butter to grease the Blackstone before you place the eggs on the hot surface. It will help keep the omelette from sticking and will keep it all in one piece.
How to Make an Omelette on a Blackstone Griddle
- Preheat the Blackstone to medium heat, and while it’s preheating you can prep the eggs.
- Crack all eggs in a medium mixing bowl and whisk until combined. Add a dash of salt and pepper and pour the milk into the egg mixture. Whisk until all ingredients are combined and set aside.
- Place the bacon on the preheated griddle and fry until crisp. Then, remove the bacon from the Blackstone and chop it on a cutting board or use food scissors to cut it into chunks. Set it off to the side.
- Turn the Blackstone down to medium-low heat and let it cool a little. Then, place 1 tablespoon of butter or cooking oil on the griddle and spread it around.
- Pour half of the egg mixture onto the griddle and let the eggs cook for 1-2 minutes, until mostly cooked through.
- Place ¼ cup shredded cheese and half of the bacon in the middle of the cooked eggs. Then, fold over both ends with a spatula and move it to the cool side of the griddle.
- Repeat with remaining eggs and toppings, then serve!

How to store Leftover Omelettes
Leftovers of this omelette on a Blackstone can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, pop it in the microwave oven until heated through. I do not recommend freezing leftovers of this bacon cheese omelette.
How to Reheat Omelettes
Place leftover omelets on a microwave safe plate and cover with damp paper towel. Heat it in the microwave for 30 seconds, then ten second intervals if you’d like it hotter.
Do you cook omelettes on high or low heat?
Omelettes are best cooked on low heat! They will cook more evenly and won’t burn the side of the eggs that is directly in contact with the cook surface.
Don’t get impatient and bump the heat up. Cooking eggs on low heat will only take a few minutes and they’ll cook perfectly every time.
Pro Tips!
- If you’re not a fan of bacon, crumble up some breakfast sausage or any other meat you want and use that instead!
- Like a little kick with your omelette? Grab some hot sauce and top your warm and cheesy omelette with that spicy sauce.
- Feel free to switch up the cheese! Use mild or sharp cheddar, Colby jack, mozzarella, or anything else you want.
Fair warning…once you make this omelette, you’ll want it every morning! But we think that’s perfectly ok!

Blackstone Omelet
Ingredients
- 6 large eggs
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 3 Tablespoons milk
- 12 pieces thick cut bacon
- 2 Tablespoons butter or cooking oil divided
- ½ cup shredded cheddar cheese divided
Instructions
- Preheat the griddle on medium heat.
- While the griddle is preheating, crack the eggs into a mixing bowl and whisk until combined. Add salt, pepper and milk to egg mixture, whisk to combine. Set aside.
- Once the griddle is preheated, place bacon on the griddle. Fry until bacon is crisp.
- Chop bacon using a chef’s knife on a cutting board or food scissors. Place it off to the side of the griddle where it is cooler.
- Turn the griddle down to medium-low heat and let cool off a little.
- Place 1 Tablespoon butter on the griddle and let it melt, spreading to cover the griddle.
- Pour half of the egg mixture on top of the griddle. Let the eggs cook for 1-2 minutes or until mostly cooked through.
- Top middle of eggs with ¼ cup shredded cheese and half of the chopped bacon, fold over both ends with a spatula like a burrito. Move to the cool side of the griddle.
- Repeat with remaining eggs and toppings.
