  • Preheat the smoker to 250 degrees Fahrenheit.
  • Separate the wings into drumettes and wings, if necessary
  • Pat chicken wings completely dry with a paper towel.
  • Place wings in a mixing bowl and toss with olive oil. When completely coated add BBQ rub and toss until evenly distributed.
  • Place wings on the preheated smoker.
  • Smoke for 2 hours, maintaining constant smoke.
  • Raise the temperature of the smoker to 375 degrees Fahrenheit. Brush wings with BBQ sauce and cook until temperature is 165 degrees or about ten minutes. This step is optional if you desire a BBQ sauce on your wings. If you do not want the BBQ sauce, smoke the wings until they are 165 degrees internal temperature.
  • Remove from the heat and let rest for approximately 10 minutes and then serve.

Notes

FRIDGE: Store your leftover crispy smoke chicken wings in the fridge in an airtight container for up to 4 days.
FREEZER: Place leftover wings in an airtight container or freezer bag and store in the freezer for up to 3 months.
REHEAT: I recommend popping them into the oven to reheat. And then add a little extra BBQ sauce to them after they have been heated all the way through.
