Smoked Eggs

Ingredients

  • 12 eggs raw

Instructions

  • Preheat your smoker to 325 degrees F according to manufacturer's instructions.
  • Place the eggs directly on the grates of your smoker. Close the lid of your smoker and smoke for 30 minutes at 325 degrees F.
  • Remove the cooked eggs from the smoker and place into an ice bath immediately. Chill completely.
  • Reduce heat on your smoker to 180 degrees F.
  • Peel the eggs and return them to the grill. Smoke for 30-45 minutes depending on the amount of smoke flavor you want in your eggs.

Why Smoke Eggs?
It’s all about the flavor. The longer you cook the eggs, the more smoke flavor is imparted into the eggs. They taste delicious and it’s definitely a new recipe you have to try!
Plus, they are perfect for Easter and making deviled eggs out of or adding to your salads for a delicious topping.
Why do you place the eggs directly in an ice bath?
Placing the eggs in the ice bath will make them easier to peel. One of the biggest complaints about smoked eggs is they are difficult to peel. This little trick will make it easier!
Tip – Use Older Eggs
Something else to keep in mind is that extremely fresh hard-boiled eggs are difficult to peel. The shell doesn’t cleanly and picking off part of the shell leaving gouges on the surface of the egg. But as eggs grow older, their shells peel more easily.
What pellets to use?
This one is really up to you. The eggs will really take on the flavor of what pellets you use because they have no shell at the end.
A mesquite pellet is going to give you a bold flavor, while a alder or maple wood pellet is going to give you a more mellow flavor.
What temperature?
When you place these eggs back on the smoker after peeling them you want it to be at a very low temperature. This is because the eggs are already cooked and you aren’t looking to cook them, just to smoke them to give them that smoked flavor.
If your pellet grill has a “cold smoke” setting you could even use that.
Why is my egg yellow?
This is totally normal, so no worries! The longer you leave it on the darker it will get from the smoke.
