Vegetable Options
This recipe is so versatile so you can use whatever vegetables you currently have. I love it for using up the random assortment of vegetables at the end of the week. You can even throw in some potato or sweet potato chunks.
Another option is to slice some ring sausage and toss it in there for an easy meal.
Here are some great ideas for using in this recipe.
  • Fresh corn, cut into 1” pieces
  • Yellow Squash
  • Red Onion
  • Green Bell Pepper
  • Red Bell Pepper
  • Yellow Bell Pepper
  • Mushrooms
  • Brussels Sprouts, halved
  • Asparagus, cut into 1” pieces
  • Eggplant
  • Carrots
  • Cauliflower
