Wash the apples. Then slice off the 1/4 of the apples and scoop out the cores using a sharp pairing knife or apple corer. Cut the holes so they are about an inch wide. Leave the bottom 1/2'' intact.
In a small mixing bowl combine the rest of the ingredients. Stuff the apples with this mixture.
Place each apple on a piece of heavy-duty foil (about 12 in. square). Fold foil over apples and seal tightly.
Grill, covered, over medium heat for about 20 minutes or until apples are tender.
When they are done grilling remove from grill and open foil carefully to allow steam to escape. Place apples on plate and top with caramel and ice cream.
Notes
To make in oven - Place foil wrapped apples in baking dish. Bake at 350 degrees for 20-25 minutes or until soft.
