2-3 pound pork loin roast 3 tbsp yellow mustard 2 Tablespoons Sweet and Smoky Rub
Preheat your grill to 350 degrees Fahrenheit for indirect heat.
Trim any excess silverskin. You can leave a small fat cap on the top of the roast. Rub the roast with mustard and season with Sweet and Smoky Rub.
Place the seasoned pork loin directly on the grill grates over indirect heat. Cook the pork loin for 1 hour or until the pork reaches an internal temperature of 145 degrees F.
Remove the pork from the grill and allow it to rest for 15 minutes. Slice into 1/4 inch slices and serve.
