Ingredients

  • 3 pounds flank steak
  • 1 Tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • 2 fresh limes
  • 4 Tablespoons butter divided
  • 16 corn tortillas street taco size
  • ½ onion diced
  • 1 bunch cilantro finely chopped

Instructions

  • Preheat the Blackstone griddle over high heat (approximately 450 degrees Fahrenheit). You want the griddle to be hot to get a good sear on the steaks.
  • Cut the steak into bite sized pieces. Place the steak into a medium sized mixing bowl. Add the salt, pepper, and garlic powder and mix until combined.
  • Spread the oil out onto the Blackstone.
  • Once the oil is hot, place the steak on the Blackstone on top of the oil. Let them cook for 2-3 minutes and do not move them to get a good sear on the steak.
  • Flip the steak then cook for 2-3 more minutes to sear the opposite side of the steaks.
  • Top the steak with 2 Tablespoons of the butter and allow it to melt into the steak mixture.
  • Remove the steak from the grill to a separate plate. Top with the fresh lime juice from one lime and set aside.
  • Melt the remaining butter on the Blackstone grill and place the tortillas in a single layer on the grill. Cook the tortillas for 2-3 minutes per side until browned.
  • Then it's time to assemble the tacos. Use 2 tortillas per taco. Spoon the meat mixture onto the tacos. Then top with cilantro, lime juice and diced onions if desired.

Notes

Fridge: Store leftover steak in an airtight container in the fridge for up to 3 days. Store tortillas, diced onion, cilantro and any other toppings separately.
Freezer: You can also freeze leftover steak on it's own. Freeze it in a freezer safe airtight container, or better, in a freezer zip top bag with all air squeezed out.
Reheat leftover steak on the Blackstone. Add oil to the pan to start and reheat until hot throughout.
