Ingredients

  • 1 ½ pounds sirloin steak or ribeye
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 Tablespoons olive oil
  • 2 teaspoons garlic minced
  • ¼ cup butter melted
  • 1 red bell pepper seeded and cut into 1 inch pieces
  • 1 red onion cut into 1" pieces
  • 1 tablespoon chopped fresh parsley more for garnish

Instructions

  • Cut the steaks into 1-inch cubes. Season with the salt & pepper. Set aside.
  • In a medium sized mixing bowl add the olive oil, melted butter, and minced garlic and stir until combined.
  • Add the beef to the butter mixture and toss until all the steak is coated . Marinate 30 minutes or up to 2 hours. If using wood skewers, soak them in water for at least 30 minutes while the beef is marinating.
  • Preheat the grill to medium-high heat about 375 degrees Fahrenheit.
  • Thread the beef, peppers and onions onto the skewers.
  • Grill for about 9-12 minutes turning skewers occasionally until beef is 135-140 degrees Fahrenheit or until your desired doneness.
  • Rest 5 minutes before serving.
