- 1 ½ pounds sirloin steak or ribeye
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 4 Tablespoons olive oil
- 2 teaspoons garlic minced
- ¼ cup butter melted
- 1 red bell pepper seeded and cut into 1 inch pieces
- 1 red onion cut into 1" pieces
- 1 tablespoon chopped fresh parsley more for garnish
Cut the steaks into 1-inch cubes. Season with the salt & pepper. Set aside.
In a medium sized mixing bowl add the olive oil, melted butter, and minced garlic and stir until combined.
Add the beef to the butter mixture and toss until all the steak is coated . Marinate 30 minutes or up to 2 hours. If using wood skewers, soak them in water for at least 30 minutes while the beef is marinating.
Preheat the grill to medium-high heat about 375 degrees Fahrenheit.
Thread the beef, peppers and onions onto the skewers.
Grill for about 9-12 minutes turning skewers occasionally until beef is 135-140 degrees Fahrenheit or until your desired doneness.
Rest 5 minutes before serving.
