- 1 ½ pounds boneless skinless chicken breast
- ½ cup olive oil
- 1 lemon juiced
- 2 teaspoons garlic minced
- 1 Tablespoon oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 1 teaspoon basil
- ½ teaspoon dill
- ¼ teaspoon thyme
In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, ground black pepper, basil, dill and thyme.
Toss chicken with mixture until thoroughly and evenly coated.
Cover bowl with plastic wrap and let chicken marinate at least 30 minutes and up to two hours.
Preheat grill to medium high or oven to 350 degrees Fahrenheit.
Prepare grill by lightly oiling the grates or oiling the grill pan over stop top.
Remove the chicken from the marinade and discard remaining marinade. Place chicken breasts on hot grill grates, cover lid and grill for 5 minutes. Flip chicken over and allow to grill for 5-7 minutes longer or the internal temperature of the thickest part of the breast reaches 165 degrees Fahrenheit. The amount of time the chicken takes to cook will depend on the thickness of the chicken breast and size. Always check the internal temperature of the chicken.
Remove chicken from grill, tent with foil and allow to rest for 5 minutes before slicing and serving.
Fridge: Store leftover Greek chicken in an airtight container for up to 3 days.
Freezer: Freeze cooked chicken on a baking sheet before wrapping individually in plastic wrap and storing in an airtight container or freezer bag. Thaw in the fridge overnight before reheating.
Reheat Greek marinated chicken breasts in the oven or even in the microwave with a dash of water or broth to keep them nice and moist.
