Preheat your grill to 350 degrees Fahrenheit for indirect heat.
Trim any excess silverskin. You can leave a small fat cap on the top of the roast. Rub the roast with mustard and season with Sweet and Smoky Rub.
Place the seasoned pork loin directly on the grill grates over indirect heat. Cook the pork loin for 1 hour or until the pork reaches an internal temperature of 145 degrees Fahrenheit.
Remove the pork from the grill and allow it to rest for 15 minutes. Slice into 1/4 inch slices and serve.
FRIDGE: Place leftover slices of pork loin in an airtight container and store in the fridge for 3-4 days.
FREEZER: Wrap leftover pork loin in plastic wrap or aluminum foil. You can also place leftovers in an airtight container. Freeze for up to 3 months.
To reheat, place in the oven with a splash of water and cover with foil. You can also reheat slices on the stove top until heated thoroughly!
