Pollo Asado

Grilled Pollo Asado is so easy to make. Marinated chicken thighs that are grilled. So juicy, tender and perfectly to use to make tacos, burritos or bowls!

Ingredients

Marinade

  • ½ cup orange juice
  • ¼ cup lime juice
  • ¼ cup olive oil
  • 2 teaspoons kosher salt
  • 3 cloves garlic
  • 2 teaspoons Mexican oregano or regular oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • ½ red onion chopped

Chicken

  • 3 pounds chicken thighs boneless and skinless

Instructions

  • Add all the marinade ingredients into a large bowl. Whisk until combined.
  • Place the chicken in the large bowl with the marinade and cover the chicken with the marinade. Cover the bowl with plastic wrap, place in the refrigerator and marinate for at least 2 hours or overnight.
  • Preheat the grill to 350 degrees Fahrenheit.
  • Place the chicken on the grill and close the lid. Cook for 8 minutes then flip the chicken over and cook for another 8 minutes or until the internal temperature of 165 degrees Fahrenheit in the thickest part of the chicken. Cook time may vary depending on thickness and size of chicken.
  • Remove from the grill and rest for 5 minutes before serving.

Notes

Allow chicken to cool completely then you can either slice up each thigh or store them whole. Transfer the chicken to an airtight container or freezer bag.
FRIDGE: Store the chicken in the refrigerator for 3-4 days.
FREEZER: Tightly wrap the chicken in aluminum foil or plastic wrap before placing into a freezer bag. Then freeze the pollo asado for up 3 months. Thaw in the fridge overnight before reheating.
Reheat your leftovers in the oven or on the stovetop for the best results. Reheating chicken in the microwave tends to make the texture a little funny. Cook until the chicken reaches a safe internal temperature.
