Smoked Apples

- 6 apples medium to large, Fuji or Honeycrisp or any sweet variety
- 6 Tablespoons unsalted butter melted
- ½ cup brown sugar packed
- ½ cup dried cranberries
- ½ cup walnuts chopped
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Preheat smoker to 275 degrees Fahrenheit.
Core the apples, remove only about ¾ of the depth of the apple.
Add butter and brown sugar to a medium sized bowl and combine. Fold in the cranberries, chopped walnuts, ground cinnamon, and nutmeg into the butter until blended well.
Divide the filling evenly and fill the centers of the apples.
Place apples into the smoker. You can arrange them using grill rings to help keep them upright or place them in a cast iron skillet. Smoke until the sides of the apples are soft, 1 to 1 ½ hours depending on the size of the apples.
Serve immediately with vanilla ice cream if desired.
