Preheat the smoker to 250 degrees Fahrenheit.
Separate the wings into drumettes and wings, if necessary
Pat chicken wings completely dry with a paper towel.
Place wings in a mixing bowl and toss with olive oil. When completely coated add BBQ rub and toss until evenly distributed.
Place wings on the preheated smoker.
Smoke for 2 hours, maintaining constant smoke.
Raise the temperature of the smoker to 375 degrees Fahrenheit. Brush wings with BBQ sauce and cook until temperature is 165 degrees Fahrenheit or about 10 minutes. This step is optional if you desire a BBQ sauce on your wings. If you do not want the BBQ sauce, smoke the wings until they have an internal temperature of 165 degrees Fahrenheit.
Remove from the heat and let rest for approximately 10 minutes before serving.
FRIDGE: Store your leftover crispy smoked chicken wings in the fridge in an airtight container for up to 4 days.
FREEZER: Place leftover wings in an airtight container or freezer bag and store in the freezer for up to 3 months.
REHEAT: I recommend popping them into the oven to reheat. Add a little extra BBQ sauce to them after they have been heated all the way through.
