- 4 Russet potatoes medium sized, washed and dried
- ¼ cup butter melted
- 2 teaspoons garlic minced
- 8 slices cheddar cheese sharp
- 2 Tablespoons chives chopped
- salt and pepper to taste
Start smoker and set it to 350 degrees Fahrenheit.
Cut each potato so there are about 8 slices, making sure not to cut through the bottom of the potato. We recommend placing chopsticks on each side of the potato so you can’t cut all the way through it.
Place each potato onto the center a heavy duty aluminum foil sheet about 14” x 12”.
Combine melted butter and garlic in small bowl and brush it on potatoes making sure to get in between the slices.
Wrap around potato and place on the smoker for about 40 minutes or until fork tender.
Remove from smoker, cut each piece of cheese into about 8 slices and place one in between each slice of potato. Place back on the smoker to melt, without wrapping the foil around them.
Remove from smoker and sprinkle with chives. Serve immediately.
Fridge: Store leftover potatoes in an airtight container for 3-5 days, although they are definitely the best the day you make them. Remove them from the foil before storing.
Freezer: You can freeze Hasselback potatoes to enjoy another time. Skip the final step of adding the cheese and let them cool. Once cooled, wrap individually in plastic wrap before storing in a freezer bag. Thaw in the fridge overnight and add the cheese when you are ready to enjoy them.
To reheat leftovers, use the microwave in 30 second increments until hot through. The microwave won't give you as crispy of a skin, though, so you can also reheat in your oven at 350 degrees Fahrenheit until hot through, about 15-20 minutes.
