Smoked Spinach Artichoke Dip

Ingredients

  • 12 ounces frozen chopped spinach thawed
  • 14 ounces canned artichoke hearts drained and chopped
  • 1 ½ cups shredded Parmesan cheese
  • ½ cup shredded mozzarella
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2 teaspoons minced garlic

Instructions

  • Preheat the smoker to 275 degrees Fahrenheit.
  • In a medium bowl, mix spinach, artichoke hearts, Mozzarella cheese and Parmesan cheese together.
  • In a separate bowl, mix cream cheese, sour cream, mayonnaise, and garlic together with an electric mixer until smooth.
  • Add the cream cheese mixture to the spinach mixture and mix until well combined.
  • Pour the mixture into an 8-x-8-inch foil pan and smoke for 60 minutes.
  • Serve immediately with chips, crackers, or vegetables for dipping.

Notes

Transfer leftover dip out of the baking dish and into an airtight container and allow to cool completely before attaching the lid. Store in the fridge for 3-4 days. You can freeze leftovers if you want, but they don't usually thaw and reheat well.
Reheat in the oven for best results! But you can also heat it in the microwave for something more quick.
