Smoked Almonds

Ingredients

  • 32 ounces raw almonds
  • 4 Tablespoons butter or olive oil
  • 2 Tablespoons sugar
  • 1 Tablespoon salt
  • 2 teaspoons black pepper
  • 2 teaspoons paprika
  • ½ teaspoon cumin

Instructions

  • Preheat the smoker to 250° Fahrenheit according to the manufacturer's directions. We recommend using apple, pecan, cheery hickory or a signature blend of wood pellets.
  • Spread the almonds onto a rimmed baking sheet or aluminum pan and smoke for 1 hour.
  • When the hour of smoking time is almost up combine the melted butter and seasonings in a small bowl.
  • Remove almonds from the smoker and drizzle seasoned butter over the top of them. Toss almonds until coated with butter and place back on the smoker.
  • Smoke for half hour or until toasted and browned stirring several times.
  • Remove from smoker and allow to cool slightly, serve warm or can be stored in an air tight container for 2 weeks.

Notes

  • There are a few wood pellets you can use for smoked almonds. We love apple, pecan, cherry, or hickory. You can also use a blend of wood pellets.
  • Keep them in an airtight container at room temperature, and they will keep for up to two weeks. Don’t store them until they are completely cooled otherwise moisture will get trapped in the container and they won’t keep as long.
  • Remember to use raw whole almonds for this recipe. I don’t recommend using roasted almonds or other flavored ones. Plain almonds work best.
  • Cook them low and slow for the best result – if the smoker temperature is too high they will burn.
  • Keep an eye on them after you coat them in the seasoned butter. Once they are toasty hot take them off the smoker.
