- 2-3 pound Venison Roast of your choice we used Tri-tip
- 1 Tablespoon olive oil
- 4 Tablespoons beef rub
Trim any excess fat off the roast and remove any silver skin.
Lightly coat the roast with olive oil and sprinkle the dry rub on all sides of the roast making sure to cover all sides of the roast.
Place the seasoned roast in the refrigerator for 2 hours.
Preheat the smoker to 225 degrees Fahrenheit after the roast has marinated.
Place roast into the preheated smoker directly onto the grates. Close the smoked lid and smoke until the internal temperature comes to 130 degrees Fahrenheit, approximately 1 hour.
Turn the smoker temperature down to 180 degrees Fahrenheit and smoke for an additional ½ to 1 hour or until the internal temperature go over 140 degrees Fahrenheit.
Remove the roast from the smoker and allow to rest for 15 minutes before slicing.
Place the meat on a cutting board and slice into thin slices. Serve immediately.
