Smoked Venison Roast

Ingredients

  • 2-3 pound Venison Roast of your choice we used Tri-tip
  • 1 Tablespoon olive oil
  • 4 Tablespoons beef rub

Instructions

  • Trim any excess fat off the roast and remove any silver skin.
  • Lightly coat the roast with olive oil and sprinkle the dry rub on all sides of the roast making sure to cover all sides of the roast.
  • Place the seasoned roast in the refrigerator for 2 hours.
  • Preheat the smoker to 225 degrees Fahrenheit after the roast has marinated.
  • Place roast into the preheated smoker directly onto the grates. Close the smoked lid and smoke until the internal temperature comes to 130 degrees Fahrenheit, approximately 1 hour.
  • Turn the smoker temperature down to 180 degrees Fahrenheit and smoke for an additional ½ to 1 hour or until the internal temperature go over 140 degrees Fahrenheit.
  • Remove the roast from the smoker and allow to rest for 15 minutes before slicing.
  • Place the meat on a cutting board and slice into thin slices. Serve immediately.
