Preheat the Blackstone griddle over medium high heat, about 400 degrees Fahrenheit.
Place the bacon strips on the hot griddle with space between them so they do not overlap.
Cook the bacon for 3-5 minutes, depending on the thickness of your bacon, flip with tongs and continue cooking for an additional 3-5 minutes or until bacon is cooked to your preferred doneness. The bacon is ready when the white fat on the bacon becomes translucent and pink parts are a reddish-brown color.
Remove the bacon from the griddle to a plate lined with paper towels to soak up excess grease.
Serve immediately.
Fridge: Store leftover bacon in an airtight container in the fridge for up to 5 days.
Freezer: Lay cooked bacon in a single layer on a baking sheet and freeze before storing in an airtight container or freezer bag. Separate layers with parchment paper. Reheat from frozen or thaw in the fridge overnight.
Reheat leftover bacon by popping the slices in the microwave until warm. Cover with paper towel to avoid grease splattering in your microwave!
