Blackstone Breakfast Potatoes

- 3 large russet potatoes peeled, if desired and diced
- 1 red bell pepper seeded and diced
- 1 green bell pepper seeded and diced
- 5 Tablespoons olive oil divided
- 1 teaspoon seasoned salt
- 1 ½ teaspoons garlic powder
- 1 teaspoon dried parsley
- ½ teaspoon paprika
- ½ teaspoon ground black pepper
- 4-5 strips bacon cooked and chopped optional
- 2 Tablespoons fresh Italian parsley chopped for garnish
Preheat the griddle to medium-high heat, about 400 degrees Fahrenheit.
Clean and chop potatoes (peel if you wish) and peppers then add to a large bowl. Drizzle with 3 Tablespoons of olive oil.
In a small bowl combine the salt, garlic powder, paprika, dried parsley and ground black pepper. Sprinkle half of the seasonings over the potato mixture and stir to coat. Sprinkle remaining seasonings and stir again.
Add the remaining olive oil to the griddle and spread out. Add the potato mixture to the griddle and cook for 15-20 minutes, stirring occasionally, until golden brown.
Remove from the griddle and sprinkle chopped bacon over potatoes. Garnish with fresh parsley if desired.
Serve immediately.
