A crispy breakfast potato with a creamy, tender inside is the best addition to a spread brunch every time. But when you add bacon and fresh parsley, watch out! Now you are really in for a treat with these crispy potatoes on the Blackstone.

There really isn’t much prep time for these and you only need a handful of ingredients which we know you’ve already got in your pantry, so there is nothing stopping you from cooking these up. Add some breakfast sausage and eggs to the griddle and you’ve got your meal all set.

This delicious side dish is great for breakfast or anytime, really. It’s so easy to throw together on your Blackstone griddle for any meal, even on a busy weeknight. Kids bring all their friends home and they’re hungry for supper? This is sure to satisfy everyone, double up the batch!

Ingredients Needed

  • Potatoes – We use Russet potatoes for this breakfast hash but you can also use Yukon gold potatoes.
  • Bell peppers – Seed and dice one red pepper and one green pepper.
  • Olive oil – Olive oil is great to use because of its high smoke point.
  • Seasoning – Seasoned salt, garlic powder, dried parsley, paprika and ground black pepper are what give these potatoes so much flavor.
  • Bacon – This is optional, but this dish is so tasty with savory bacon added to it.
  • Fresh Italian parsley – Parsley garnish adds a fresh taste and vibrant color.

what are the best type of potatoes to use?

The best potatoes to cook on the Blackstone griddle are Russet or Yukon golds. Baby potatoes are great to use as well because of their small size, just cut them in half or quarters and you are good to go.

We do not recommend red potatoes because they are waxy and will not crisp up as nicely as the more pale varieties.

how to make blackstone breakfast potatoes

Clean and chop potatoes and peppers and add to a large bowl. Drizzle with 3 Tablespoons oil.

In a small bowl, combine seasonings and sprinkle have over the potato mixture. Stir to coat before sprinkling with remaining seasonings and stirring again.

Add olive oil to the griddle and add the potato mixture. Cook, stirring occasionally for 15-20 minutes, until golden brown.

Remove from the griddle and sprinkle chopped bacon over potatoes. Garnish with fresh parsley if desired.

Serve immediately.

pro tips

  • If you have diced onion in your fridge from meal prep, add those to the potato mix for some added flavor.
  • Sprinkle some cheddar cheese on top and let it melt for deliciously gooey bites.
  • Fresh herbs like rosemary and thyme are also nice choices for garnish if you don’t have fresh parsley on hand.

Breakfast potatoes go with just about anything and we love to serve them with eggs, sausages, toast – the works!

Cook everything at once and serve fried potatoes, Blackstone Breakfast Sandwiches and a nice, easy French Toast. If you’ve got a sweet tooth, we definitely recommend giving Cinnamon Rolls a try on the Blackstone, too.

Of course, feeding a crew for brunch isn’t complete without a round of Mimosas or Arnold Palmers!

how long do potatoes take on the blackstone griddle?

Easy potatoes on the Blackstone only take about 15-20 minutes to cook so you will be eating in no time.

do i boil the potatoes before frying them?

You do not need to boil potatoes before frying them. Sure, there are recipes that require you to do so, but we are saving a step and dishes here by placing the raw potatoes directly onto the grill after seasoning them. They will be perfectly fork-tender!

can i close the lid on the blackstone griddle?

Good question. You can close it intermittently, but I don’t recommend leaving it closed as you cook because it can actually damage the lid itself.

how to store leftovers

Store any leftover Blackstone breakfast potatoes in an airtight container in the fridge for up to 3 days.

how to reheat leftover breakfast potatoes

Reheat any leftovers back on the Blackstone, stove top or air fryer so the potatoes stay nice and crispy. You can microwave them if you want, but they might not stay as crispy.

Ingredients

  • 3 large russet potatoes peeled, if desired and diced
  • 1 red bell pepper seeded and diced
  • 1 green bell pepper seeded and diced
  • 5 Tablespoons olive oil divided
  • 1 teaspoon seasoned salt
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • 4-5 strips bacon cooked and chopped optional
  • 2 Tablespoons fresh Italian parsley chopped for garnish

Instructions

  • Preheat the griddle to medium-high heat, about 400 degrees Fahrenheit.
  • Clean and chop potatoes (peel if you wish) and peppers then add to a large bowl. Drizzle with 3 Tablespoons of olive oil.
  • In a small bowl combine the salt, garlic powder, paprika, dried parsley and ground black pepper. Sprinkle half of the seasonings over the potato mixture and stir to coat. Sprinkle remaining seasonings and stir again.
  • Add the remaining olive oil to the griddle and spread out. Add the potato mixture to the griddle and cook for 15-20 minutes, stirring occasionally, until golden brown.
  • Remove from the griddle and sprinkle chopped bacon over potatoes. Garnish with fresh parsley if desired.
  • Serve immediately.
