Forget the main course — at my house, the grilled appetizers are where it's at.

Nobody remembers what you served for dinner, but they sure remember the Pork Belly Burnt Ends you passed around while the steaks were still on the grill. (My husband swears I "forgot" dinner on purpose once. He's not entirely wrong.) These are the smoked appetizers and BBQ appetizer recipes I pull out when the neighbors wander over, the game is on, or I just need an excuse to fire up the smoker on a random Tuesday.

You'll find smoky, cheesy bites like Armadillo Eggs and Jalapeño Popper Meatballs alongside easy grill appetizers — Smoked Nuts, BBQ Chex Mix, Blackstone Popcorn, loaded nachos, and pretzel bites that vanish faster than I can plate them. Some are low and slow on the pellet grill. Some come together in ten minutes on the griddle. All of them are built for sharing (though between you and me, I don't always).

Tailgate, game day, or holding folks over until the ribs come off — consider this your starting lineup of easy grilled appetizers. Grab a platter, grab a cold drink, and let's get grilling.

(Fair warning, folks: start serving smoked appetizers and guests stop RSVPing "maybe.")
