- 1 ½ pounds chicken breasts cubed
- 2 Tablespoons olive oil divided
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 red onion sliced
- 3 cloves garlic minced
- 2 Tablespoons vegetable oil
- tortillas flour or corn
Mix chilli powder, cumin, smoked paprika, Kosher salt and ground black pepper in a small mixing bowl until combined and set aside.
Cube the chicken into even pieces about 1 inch in size. Place into a bowl and add 1 tablespoon of olive oil, toss to coat. Then add half of the fajita seasoning to the meat and toss to coat.
In another bowl, add sliced vegetables and remaining olive oil. Toss to coat, then add in remaining fajita seasoning and mix until coated.
Preheat the Blackstone for about 5 minutes over medium high heat. Pour vegetable oil on the preheated griddle and spread out.
Put the chicken and vegetables on the griddle. Cook for 8-10 minutes, tossing the chicken and vegetables a few times. You want these to be slightly charred and cooked through. During the last few minutes add garlic.
During the last minute of cooking, place tortillas on a griddle to warm.
Remove the chicken, vegetables and tortillas from the griddle and serve with desired toppings.
Fridge: Store leftovers in an airtight container for up to 4 days. Keep tortillas and cheese separate.
Freezer: You can freeze leftovers, in a freezer bag or airtight container, just know that the peppers and onions will likely be quite soft when you thaw and reheat. Freezing in individual portions makes for quick and easy lunches for work. Thaw in the fridge overnight.
Reheat leftover chicken and veggies on the Blackstone until hot through. If you are reheating them inside, the stove top and microwave are great options.
