Ingredients For Blackstone Chicken Fajitas

  • Chicken breasts – Cutting chicken breasts into even sized cubes will help them to cook evenly. You can use chicken thighs, too, if that’s what you’ve already got on hand.
  • Olive oil – Use this or any other cooking oil with a high smoke point. This is used to adhere the seasonings to the chicken.
  • Seasonings – The key to delicious chicken fajitas is in your pantry. You need chili powder, cumin, smoked paprika, kosher salt and ground black pepper.
  • Bell peppers – Use red and yellow bell peppers to add a sweet flavor to this dish. You can use orange, but we don’t recommend green because it has a bitter taste.
  • Red onion – Sliced red onion adds loads of flavor to these fajitas.
  • Garlic – Minced garlic gives a great flavor boost to Blackstone chicken fajitas.
  • Vegetable oil – You can also use canola oil to cook up the chicken and veggies.
  • Tortillas – Use your favorite, corn or flour, to wrap up the savory filling.

How To Make Blackstone Chicken Fajitas

  1. Mix seasonings in a small mixing bowl and set aside.
  2. Cube the chicken into even 1-inch pieces. Place into a bowl, add olive oil and toss to coat. Then add half of the fajita seasoning to the meat and toss well.
  3. Add sliced vegetables and remaining olive oil to another mixing bowl. Toss to coat, then add in remaining fajita seasoning and mix again until coated.
  4. Put the chicken and vegetables on the prepared griddle. Cook for 8-10 minutes, tossing the chicken and vegetables a few times. During the last few minutes add garlic.
  5. During the last minute of cooking, place tortillas on a griddle to warm.
  6. Remove the chicken, vegetables and tortillas from the griddle and serve with desired toppings.

Ingredients

  • 1 ½ pounds chicken breasts cubed
  • 2 Tablespoons olive oil divided
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 3 cloves garlic minced
  • 2 Tablespoons vegetable oil
  • tortillas flour or corn

Fajita Seasoning

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  • Mix chilli powder, cumin, smoked paprika, Kosher salt and ground black pepper in a small mixing bowl until combined and set aside.
  • Cube the chicken into even pieces about 1 inch in size. Place into a bowl and add 1 tablespoon of olive oil, toss to coat. Then add half of the fajita seasoning to the meat and toss to coat.
  • In another bowl, add sliced vegetables and remaining olive oil. Toss to coat, then add in remaining fajita seasoning and mix until coated.
  • Preheat the Blackstone for about 5 minutes over medium high heat. Pour vegetable oil on the preheated griddle and spread out.
  • Put the chicken and vegetables on the griddle. Cook for 8-10 minutes, tossing the chicken and vegetables a few times. You want these to be slightly charred and cooked through. During the last few minutes add garlic.
  • During the last minute of cooking, place tortillas on a griddle to warm.
  • Remove the chicken, vegetables and tortillas from the griddle and serve with desired toppings.
