Delicious homemade guacamole with grilled corn! This is perfect to snack on, top burgers or steaks with! This Grilled Corn Guacamole is bursting with flavor, healthy and so easy!
Corn Guacamole
What do you get when you cross corn with avocado? Well Corn Guacamole of course! Truly, this is the best of both worlds! Creamy, rich avocado and smokey, tender roasted corn – the corn gives the guacamole a delicious texture and AMAZING flavor!
So why not, right?
Corn with Guacamole is great as a dipper, tasty topping a burger and fabulous with an enchilada. Really, you get to choose! Plus it’s quick and easy to make and guilt-free! What’s not to love?!!

I was creating recipes (4 that day) and I was having a pity party because I had all this amazing food and no one to share it with. The reason I love making food is to share it with my loved ones, so when I am on a recipe creation day and no one is around I start feeling sorry for myself!
When I was outside grilling this Corn Guacamole I spied my neighbor and one of my best friends. I immediately loaded up a container of this guacamole and went trucking over there because I knew she’d love it!
Her and her husband were still raving about it to our friends the next week when we were at their house for a birthday party. I may have beamed a little bit!

What are the health benefits of an avocado?
- Incredibly nutritious, an avocado is full of great nutritents!
- Loaded with good fat and lots of great fiber.
- Did you know avocados have more potassium than bananas? Yup, it’s true!
Let’s be honest though, it’s often what you put with the avocado that takes it to the dark side. So next time instead of reaching for chips, how about trying:
- avocado toast
- use it in place of your salad dressing
- veggies for dipping
- pineapple (yes avocado and pineapple go wonderfully together!)

Corn with Guacamole
What makes this guac especially delicious is the corn. Have you tried Corn with Guacamole? Introducing this new flavor and crunch makes it taste even better!
How do you roast corn kernels?
- husk the corn and remove the silk
- grill it directly on the grill over medium heat
- grill until golden with nice char marks
It’s so simple, but this extra step ads a ton of flavor!
Can I roast canned or frozen corn?
You can pan roast both versions, you’ll just want to remove as much moisture prior first. Toss with a small amount of oil and seasoning. Spread in a single layer and roast over medium heat in a skillet, flipping occasionally.
How to make Grilled Corn Guacamole
- Grill the corn on medium high heat until it is nice and golden with grill marks. Set aside to cool.
- Cut avocados in half and scoop out into a mixing bowl.
- Mash with fork until there are just small chunks left.
- Cut the corn off of the cobs and add to avocado mixture.
- Then add onion, cilantro, garlic, sea salt, lime and tomato.
- Mix will and serve with tortilla chips

Ingredients
- 3 ears corn
- 6 avocados
- 1/2 c. red onion chopped
- 1/4 c. cilantro chopped
- 2 tsp garlic minced
- 1/2 tsp sea salt
- 1 lime juiced
- 1 large tomato cored and diced
Instructions
- Grill the corn on medium high heat until it is nice and golden with grill marks. Set aside to cool.

Yes, I do wish I was closer to you! But you’d never have to hunt me down, I’d be conveniently out on my front porch looking for hand-me-downs, LOL! Seriously though, we really enjoyed this guac and just loved the crunch from the corn, it was perfect with tacos yesterday!
