With perfectly seasoned, tender pieces of chicken and loads of melty cheese, they’re guaranteed to be just as good as your favorite local restaurant.
Once we started making things like Blackstone nachos and smash burger tacos, we knew the possibilities were endless when it came to what we could create on the griddle. So as we experimented with all the best combinations for quesadillas, we ended with this one. The best Blackstone griddle quesadillas ever!

Ingredients for a Blackstone Chicken Quesadilla
- Chicken breast – Dice boneless skinless chicken breast into small chunks to make the perfect sized pieces of tasty chicken for these quesadillas.
- Shredded Mexican cheese – You can use any type of shredded cheese that you want, so swap it out with cheddar, pepper jack, monterey jack, mozzarella cheese etc. if you want to.
- Salsa – Store-bought salsa or homemade salsa will both work wonderfully in a hearty quesadilla.
- Olive oil – If you don’t have olive oil on hand, you can use any other neutral flavored oil or even butter.
- Taco seasoning – Homemade taco seasoning would make this recipe just that much better! But you can also use store-bought seasoning.
- Flour tortillas – Grab a pack of your favorite flour tortillas to make a big cheesy quesadilla. We recommend getting extra large tortillas, burrito sized, so that it’s easiest to fold them over and make a quesadilla.

How to Make a Blackstone Chicken Quesadilla
Preheat your Blackstone grill over medium heat before you start prepping the chicken that you’ll need.
Then cut the chicken into small cubes and place them into a medium mixing bowl. Add taco seasoning to the chicken and mix well until the chicken is thoroughly coated in seasoning.
Spread the olive oil over the flat top griddle and then place the seasoned chicken onto the griddle in an even layer.
Sauté the chicken for 3-4 minutes on each side until browned slightly. Then top with salsa and toss thoroughly to coat well.
Continue cooking the chicken until it reaches an internal temperature of 165 degrees Fahrenheit. This will probably be another 3-4 minutes.
Push the chicken to the cooler side of the griddle and then reduce your Blackstone griddle to a medium low temperature.
Place the large burrito sized tortillas onto the griddle and then top them with shredded cheese, a layer of chicken, and then more cheese.
Then carefully fold each tortilla in half to make a half moon shape.
Cook the quesadillas for about 1-2 minutes until the first side is golden brown. Then flip and allow the other side to cook until golden brown, another 1-2 minutes.
Remove completed quesadillas and place them onto a cutting board. Slice and serve immediately.

How to Store Leftover Blackstone Chicken Quesadilla
FRIDGE: Place leftovers into an airtight container or zip top plastic bag and store in the fridge for 4-5 days.
FREEZER: Transfer leftovers to a freezer bag or airtight container once they have completely cooled. Freeze for up to 2 months. Allow to thaw completely before reheating.
How to Reheat Leftover Quesadillas
To reheat, place in the oven or on the stove top until warmed through. You can warm the quesadilla in the microwave if you prefer, but it will likely make the tortilla a bit soggy.
What to Serve Blackstone Chicken Fajita Quesadilla
There are so many delicious options to serve with this easy peasy recipe. Chips and salsa, or chips and queso, are always a good idea. A tasty side dish like Mexican street corn or a grilled corn salad would be great too. Even something a little different, like grilled caesar salad or smoked potato casserole would be tasty with a good quesadilla.
You can also simply serve the quesadilla by itself, or maybe just with a bit of fresh guacamole.

You can use all sorts of different things inside your quesadilla. Some great additions would be:

Can I cook a quesadilla in butter instead of oil?
You can cook a quesadilla in butter if you prefer, but it doesn’t have as high of a smoke point. This could cause the quesadilla to burn more easily, or cause the butter to burn which could make the quesadilla taste funny. We recommend using olive oil, or something similar, to make the outside of your quesadillas perfectly golden brown.

- Watch the tortillas closely after you put them on the griddle to make sure that they don’t burn or stick.
- Don’t place any fillings too close to the edge or they could spill over and make the quesadilla a bit difficult to flip.
- When cutting the chicken, be sure to chop them into even sized pieces. This will ensure that they cook evenly.

Blackstone Chicken Quesadilla
Ingredients
- 1 ½ pounds chicken breast diced into small cubes
- 1 Tablespoon olive oil
- 1 ounce taco seasoning (1 package)
- 2 cups shredded Mexican Cheese
- ¼ cup salsa
- 4 flour tortillas burrito size
Instructions
- Preheat the Blackstone griddle over medium high heat.
- Cut the chicken into small cubes and put in a medium mixing bowl. Add the taco seasoning to the chicken and mix until all the chicken is coated with taco seasoning.
- Spread the olive oil onto the griddle. Place the chicken onto the oiled griddle in an even layer. Sauté the chicken for 3-4 minutes per side until it's browned slightly.
- Then top the chicken with salsa and toss the chicken to thoroughly coat the chicken with the salsa. Continue to cook the chicken until it's cooked through (internal temperature of 165 degrees Fahrenheit) for approximately 3-4 more minutes.
- Push the chicken to a cooler side of the griddle. Reduce the Blackstone temperature to medium low.
- Place the tortillas on the griddle. Top each tortilla with some cheese, then layer the chicken on top and then add more cheese. Carefully fold each tortilla in half making a half moon shape.
- Cook until one side of the tortilla is golden brown (1-2 minutes). Flip and then cook until the other side is golden brown as well (1-2 minutes). Watch them closely as they brown quickly.
- Remove the quesadillas onto a cutting board. Slice them and serve immediately
