Ingredients

  • 8 ounces rice noodles
  • 3 Tablespoons vegetable oil
  • 2 pounds boneless chicken breast cubed
  • 1 cup broccoli florets
  • 14 ounces coleslaw mix (1 package)

Sauce

  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • cup beef broth
  • cup reduced sodium soy sauce
  • 1 teaspoon cornstarch
  • 1 Tablespoon sesame oil
  • 1 teaspoon brown sugar

Instructions

  • Cook the rice noodles according to the package instructions and rinse with cold water to keep them from continuing to cook. Set aside.
  • Combine all the sauce ingredients in a small bowl and set aside.
  • Preheat the Blackstone over medium heat. Spread the broccoli oil onto the grill. Add the chicken to the griddle and add the broccoli onto the griddle next to the chicken. Cook the chicken and vegetables for 3-4 minutes (flipping every minute) until the chicken is browned and almost cooked through and the vegetables are tender.
  • Pour the sauce mixture over the chicken and broccoli and toss to combine. Then toss in the cooked rice noodles and coleslaw mix. Mix together, heat for 2-3 minutes or until the coleslaw mix starts to wilt and it's heated through. Make sure the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Remove from the grill, serve warm and enjoy!

Notes

FRIDGE: Transfer leftover chicken stir fry to an airtight container and store in the fridge for 4-5 days.
FREEZER: Store leftovers in the freezer for about 3 months. Allow to thaw completely before reheating. Keep in mind that the coleslaw may have a funny texture after being frozen, thawed and reheated.
There may not be as much sauce when you reheat leftovers. With that in mind, you can add a splash of broth if the stir fry is super dry, or whip up extra sauce to add. Reheat on the stove top or Blackstone for best results.
