- 8 roma tomatoes seeded and diced
- ⅓ cup chopped fresh basil
- ¼ cup shredded Parmesan cheese
- 2 cloves garlic minced
- 1 Tablespoon balsamic vinegar
- 1 teaspoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 baguette toasted and sliced
In a bowl, toss together the tomatoes, basil, Parmesan cheese, and minced garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and ground black pepper. Cover and refrigerate while preparing bread.
Heat gas grill to medium or charcoal grill until coals are ash white. You can also use a grill pan on the stove top.
Brush bread slices with olive oil; place onto grill. Grill until browned and grill marks are visible. Turn bread slices and repeat.
Remove from grill and top each toast with bruschetta. Serve immediately
Fridge: Fresh bruschetta is best enjoyed within a few hours of serving. You can keep any leftovers in an airtight container in the refrigerator for 2-3 days but it's not ideal. The tomatoes start to break down quickly.
Freezer: Technically you can freeze bruschetta but we do not recommend it. The tomatoes will break down when frozen and when you thaw the mixture it will be watery. The herbs won't be as vibrant and fresh-tasting either.
