- 1 ½ pounds chicken breast cubed
- 1 ounce fajita seasoning (1 package)
- ¼ cup lime juice about juice from 2 limes, plus more for after grilling
- 3 Tablespoons olive oil
- 2 teaspoons garlic powder
- 1 green pepper sliced into 1 inch x 1 inch squares
- 1 red pepper sliced into 1 inch x 1 inch squares
- 1 yellow pepper sliced into 1 inch x 1 inch squares
- 1 small sweet onion sliced into 1 inch x 1 inch squares
- 8 wooden or metal skewers
If you are using wooden skewers, soak the skewers in a bowl of water to prevent them from burning on the grill.
Preheat your grill to medium-high heat.
In a large bowl, combine fajita seasoning, lime juice, olive oil, and garlic powder until well mixed.
Add chicken cubes to the seasoning mixture making sure each one is completely coated.
Stack peppers, onion, and seasoned chicken cubes onto skewers alternating each for variety.
Grill fajita skewers with the grill lid closed for 8-10 minutes, flip the skewers over and cook for another 8-10 minutes or until internal temp of 165 degrees Fahrenheit.
Serve warm with limes for added flavor.
Place leftovers into an airtight container or a plastic bag, and seal bag well.
FRIDGE: Store in the refrigerator for 3-4 days.
FREEZER: Store leftovers in a freezer bag or airtight container. Freeze for up to 3 months and allow to thaw before reheating.
For best results, reheat leftovers in the oven until warmed through to a safe internal temperature.
