- Before getting started, soak the wooden skewers in a large bowl of water if you’re not using metal skewers. Go ahead and chop up the bell peppers and onions too.
- Preheat your grill to medium-high heat. Then combine fajita seasoning, lime juice, olive oil and garlic powder in a large bowl until thoroughly mixed.
- Dice up the chicken into cubes and then place chicken cubes into the marinade to make sure each one is well coated.
- Take your skewers and stack peppers, onion, and seasoned chicken onto the skewers, alternating each as you go.
- Grill the chicken kabobs for 8-10 minutes with the lid closed, then flip and cook for another 8-10 minutes. Once the internal temperature reaches 165 degrees Fahrenheit, you’re good to go!

Chicken Fajita Kebabs
Ingredients
- 1 ½ pounds chicken breast cubed
- 1 ounce fajita seasoning (1 package)
- ¼ cup lime juice about juice from 2 limes, plus more for after grilling
- 3 Tablespoons olive oil
- 2 teaspoons garlic powder
- 1 green pepper sliced into 1 inch x 1 inch squares
- 1 red pepper sliced into 1 inch x 1 inch squares
- 1 yellow pepper sliced into 1 inch x 1 inch squares
- 1 small sweet onion sliced into 1 inch x 1 inch squares
- 8 wooden or metal skewers
Instructions
- If you are using wooden skewers, soak the skewers in a bowl of water to prevent them from burning on the grill.
- Preheat your grill to medium-high heat.
- In a large bowl, combine fajita seasoning, lime juice, olive oil, and garlic powder until well mixed.
- Add chicken cubes to the seasoning mixture making sure each one is completely coated.
- Stack peppers, onion, and seasoned chicken cubes onto skewers alternating each for variety.
- Grill fajita skewers with the grill lid closed for 8-10 minutes, flip the skewers over and cook for another 8-10 minutes or until internal temp of 165 degrees Fahrenheit.
- Serve warm with limes for added flavor.
