Ingredients

  • 32 ounces raw almonds
  • 4 Tablespoons butter or olive oil
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons paprika
  • ½ teaspoon cumin

Instructions

  • Preheat the smoker to 250° Fahrenheit according to the manufacturer's directions. I recommend using apple, pecan, cheery hickory or a signature blend of wood pellets.
  • Spread the almonds onto a rimmed baking sheet or aluminum pan and smoke for 1 hour.
  • When the hour of smoking time is almost up combine the melted butter and seasonings in a small bowl.
  • Remove almonds from the smoker and drizzle seasoned butter over top. Toss almonds until coated with butter and place back on the smoker.
  • Smoke for 30 minutes or until toasted and browned, stirring several times.
  • Remove from smoker and allow to cool slightly, serve warm or can be stored in an air tight container.

Notes

Keep smoked almonds in an airtight container at room temperature for up to two weeks.
Freezer: Once completely cooled, store in an airtight container. Thaw at room temperature for 10 minutes before adding to dishes or serving.
