Ingredients

  • 3 ⅓ cups all-purpose flour
  • 3 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 15 ounces canned pure pumpkin
  • 1 cup vegetable oil
  • 4 eggs room temperature
  • cup water

Instructions

  • Preheat smoker to 350 degrees Fahrenheit. Prepare two 5x9x3 inch loaf pans with non-stick spray, set aside.
  • Put a rimmed baking sheet or cake pan upside down grill grates to prevent the bottom of the bread from cooking too fast.
  • In a large mixing bowl combine pumpkin, oil, eggs and water. Mix in dry ingredients. Mix until combined. Spoon into loaf pans.
  • Place loaf pans on baking sheet in smoker. Smoke for 65-70 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes and remove from pan to wire rack.
