- 3 ⅓ cups all-purpose flour
- 3 cups granulated sugar
- 2 teaspoons baking soda
- 1 ½ teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 15 ounces canned pure pumpkin
- 1 cup vegetable oil
- 4 eggs room temperature
- ⅔ cup water
- Preheat smoker to 350 degrees Fahrenheit. Prepare two 5x9x3 inch loaf pans with non-stick spray, set aside. 
- Put a rimmed baking sheet or cake pan upside down grill grates to prevent the bottom of the bread from cooking too fast. 
- In a large mixing bowl combine pumpkin, oil, eggs and water. Mix in dry ingredients. Mix until combined. Spoon into loaf pans. 
- Place loaf pans on baking sheet in smoker. Smoke for 65-70 minutes or until a toothpick inserted near the center comes out clean. 
- Cool for 10 minutes and remove from pan to wire rack.
