Stuffed Bacon Cheeseburgers

Ingredients

  • 2 pounds ground beef 15-20% fat content recommended
  • 3 teaspoons beef seasoning or seasoned with salt and pepper
  • 1 cup bacon bits about 8 slices of bacon, cooked and crumbled
  • 8 ounces cheddar cheese cut into thin squares or rectangles
  • 6 hamburger buns split, buttered and toasted

Instructions

  • Combine ground beef, Beef Seasoning, and cooked bacon bits in a large bowl; mix well. Form 12, thin patties from the beef mixture. Each patty should be slightly larger than a slice of cheese.
  • Divide the cheese and put on top of 6 of the patties. Top them with the remaining 6 patties, pinching the edges to form a tight seal. Make sure it's tight or the cheese will leak out.
  • Preheat grill, Blackstone, smoker or a cast-iron or other heavy bottomed skillet over medium heat. Cook burgers for about 8-9 minutes. It is common for burgers to puff up due to steam from the melting cheese. Turn burgers and prick the top of each to allow steam to escape; cook until browned on the outside and no longer pink on the inside; about 8-9 minutes. Serve on toasted hamburger buns.

Notes

FRIDGE: Store leftovers in the refrigerator 3-4 days.
FREEZER: For best results, wrap burgers individually and then place them into a freezer bag. Freeze for up to 3 months. Thaw overnight before reheating.
