  • Make these juicy burgers in just about a half hour. They’re not too difficult to make and are perfect when you want a tasty meal really quickly.
  • You only need five ingredients to make stuffed burgers. Keep everything on hand and then you can make these whenever you want.

Ingredients for Stuffed Bacon Cheeseburgers

  • Ground beef – For less greasy burgers, use lean ground beef. However, we typically like to use ground beef with a higher fat content so that the burger patties are juicy and flavorful.
  • Bacon bits – Cook up some crispy bacon, let it cool and then crumble it into little pieces to mix into the beef mixture.
  • Cheddar cheese – You can use sharp cheddar cheese slices or any other type of cheese you want. Mild cheddar, pepper jack cheese, and Colby Jack cheese would all be tasty.
  • Beef seasoning – While we are partial to our delicious Gimme Some Grilling Beef Seasoning, you can use anything you have on hand.
  • Hamburger buns – Grab a packet of your most favorite, fluffy, and fresh hamburger buns. We recommend toasting them for the most flavorful results.

How to Make Stuffed Cheeseburgers

  1. Add the ground beef, beef seasoning, and cooked bacon bits to a large bowl. Then mix well until thoroughly combined.
  2. Form 12, thin patties from the beef mixture. Each patty should be slightly larger than a slice of cheese.
  3. Divide the cheese and put a piece on top of 6 of the patties. Then top the cheese with the remaining 6 patties, and pinch the edges to form a tight seal. Make sure it’s tight or the cheese will leak out.
  4. Preheat your grill, Blackstone, smoker or a cast-iron or other heavy bottomed skillet over medium-high heat.
  5. Cook the stuffed burgers for about 8-9 minutes on the preheated grill. It is common for burgers to puff up due to steam from the melting cheese. Turn each stuffed burger and prick the top of each to allow steam to escape.
  6. Cook until browned on the outside and no longer pink on the inside. Serve on toasted hamburger buns and enjoy!

How to Store Leftover Stuffed Cheeseburgers

Allow the burgers to cool completely before storing. Then place into an airtight container or plastic zip top bag. You can also wrap them individually in aluminum foil or plastic wrap.

FRIDGE: Store leftovers in the refrigerator 3-4 days.

FREEZER: For best results, wrap burgers individually and then place them into a freezer bag. Freeze for up to 3 months. Thaw overnight before reheating.

How do I make stuffed burgers not fall apart?

Do not overwork the meat when mixing in the seasonings and building the patties. The slices cheddar cheese also need to be sealed well in the patties so that they don’t fall apart.

Can I put raw bacon in my burger?

I recommend cooking the slices of bacon first so that you can ensure they are fully cooked and crispy. Raw bacon probably wouldn’t cook well inside the burger patty and the grease would create too many juices cooking out of the burger.

Best Burger Toppings

There are tons of yummy burger toppings that you can add to these stuffed cheeseburgers for extra flavor. Here are a few great ones:

  • lettuce
  • tomatoes
  • ketchup
  • mustard
  • caramelized onions
  • extra bacon
  • sliced cheese
  • mayonnaise

Can I use ground chicken or ground turkey?

You can absolutely use ground chicken or ground turkey in place of the beef! However, you’ll need to be careful that the burger patties don’t dry out. Too lean of meat will not stay together well when cooked.

What to serve with stuffed bacon cheeseburgers

Texas twinkies would be a super tasty side dish, and a simple baked potato would be great too. Smoked baked beans and bacon wrapped asparagus are hearty sides that would pair well with stuffed bacon cheeseburgers.

An extra fun side like smoked salsa and Mexican street corn salad are so delicious too!

Pro Tips for the Best Stuffed Bacon Cheeseburgers

  • You can make these patties ahead of time if you want. Just form them and refrigerate until you’re ready to cook.

  • Use a meat thermometer to check the internal temperature of the patties before pulling them off the grill.

    These look very good. You have the cheese on the inside of the burger but does the bacon go on top of the cheese? Or do you mix it up with the ground meat ?
