LOADED WITH CHEESE & BACON!

6 Eggs

1/4 tsp salt

1/4 tsp black pepper

3 Tbsp milk

12 pieces thick bacon

Preheat the griddle on medium heat. Crack the eggs into a mixing bowl and whisk until combined. Add salt, pepper and milk to egg mixture, whisk to combine. Set aside.

Once the griddle is preheated, place bacon on the griddle. Fry until bacon is crisp.

Chop bacon using a chef’s knife on a cutting board or food scissors. Place it off to the side of the griddle where it is cooler.

Turn the griddle down to medium-low heat and let cool off a little. Place 1 Tablespoon butter on the griddle and let it melt, spreading to cover the griddle.

Pour half of the egg mixture on top of the griddle. Let the eggs cook for 1-2 minutes or until mostly cooked through.

Top middle of eggs with ¼ cup shredded cheese and half of the chopped bacon, fold over both ends with a spatula like a burrito. Move to the cool side of the griddle.
