Ingredients to Make a Blackstone Hash Brown Omelette
- Hash browns – You can typically find a large back of hash browns in the freezer section of your grocery store. Be sure to grab plain hash browns, not the ones that are seasoned. If you have any leftover, you can always simply make hash browns on the Blackstone.
- Large eggs – You’ll need plenty of eggs, so grab the large or jumbo size.
- Grated cheddar cheese – It’s always best to grab a block of cheese and grate it yourself. It’s gives you that ooey gooey cheese you want.
- Milk – I recommend using whole milk or 2% milk for best results. You could also use heavy cream or half and half if you don’t have milk on hand.
- Diced ham – Feel free to mix this up if you don’t like ham! You could use breakfast sausage, bacon, or any other type of meat you prefer.
- Diced onion – A yellow onion or white onion would have the most mild flavor.
- Butter – You can use unsalted or salted butter. Both will work great!
- Sweet and smoky rub – Grab a bottle of our sweet and smoky rub. If you don’t have one make your own!
How to Make Hash Brown Omelette on Blackstone
Begin by preheating the Blackstone on medium heat. Then, grease the griddle with 4 tablespoons of butter.
In a mixing bowl, combine eggs and milk and whisk until thoroughly combined.
Spread the hash brown across the Blackstone and toss them with the melted butter. Once they’re all coated, spread them into a large rectangle shape on one half of the griddle and make sure that they are an even thin layer.
Sprinkle sweet and smoky rub across the top of the hash browns. Then, allow them to cook until golden brown, about 10 minutes.
While they’re cooking, use the other side of the griddle to cook the chopped ham and onion. Turn frequently until the onions are translucent.
Once the hash browns are golden brown, pour the previously made egg mixture over the top. Use the back of a spatula to spread it evenly.
Sprinkle 1 ½ cups grated cheese over the egg mixture. Then, top it with ham and onions and cook for 3-5 minutes, until the eggs are set.
Use a large metal spatula and cut the giant rectangle hash brown omelette in half width wise and length wise.
Slide the metal spatula underneath the hash browns to loosen them from the griddle, then fold one end of the omelets toward the other hand, folding it in half. Repeat with remaining omelets.
Top each omelet with cheese and turn off the heat on the griddle. Once the cheese is slightly melted, remove the omelette from the griddle and serve with desired toppings.

First thing’s first, you gotta have your coffee! So either make a fresh pot of hot coffee or make some delicious cold brew coffee.
Top each omelette with some green onions, extra cheese, or even hot sauce. I love to serve this protein packed omelette with something sweet too. You can have a simple side of fruit, or make something sweet like cinnamon rolls.

Leftover hash brown omelette on the Blackstone can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, pop it in the microwave or on the stove top. It will also reheat well in the oven!
What temp should the griddle be for hash browns?
The Blackstone needs to stay around medium heat. If you have an infrared thermometer and want to check the exact temperature, anywhere between 350-375 degrees Fahrenheit will work!

Hash Brown Omelette on Blackstone

Ingredients
- 30 ounces shredded hash browns thawed
- 4 Tablespoons butter
- 12 large eggs
- ¼ cup milk
- 2 cups grated cheddar cheese
- 1 cup diced ham
- ¼ cup finely diced onion
- 1 Tablespoon Gimme Some Grilling Sweet and Smoky Rub
Instructions
- Preheat the Blackstone griddle over medium heat. Brush the grill with 4 Tablespoons of butter.
- In a small bowl combine eggs and milk, whisk until well incorporated. Set aside.
- Spread the hash browns out on the griddle and toss with melted butter. Then spread them into a rectangle, making sure they are in an even thin layer, on one half of the griddle. Sprinkle with Sweet & Smoky Rub. Allow the hash browns to cook until lightly golden brown, about 10 minutes.
- On the other side of the griddle place the chopped ham and onions turning frequently until onions are translucent.
- When the hash browns are golden brown on the bottom pour the egg mixture over the top. Spread evenly with the back of a spatula.
- Then sprinkle 1 ½ cups grated cheese over the egg mixture.
- Top with ham and onions, cook eggs 3-5 minutes or until eggs are set.
- Using a large long mutual spatula, cut the rectangle of hash browns in half width wise and in half lengthwise. Slide the metal spatula underneath the hash browns to loosen them from the griddle, then fold one end of the omelets toward the other hand, folding it in half. Repeat with remaining omelets.
- Top each omelet with remaining ½ cup of cheese. Turn off heat on the griddle. Once the cheese is slightly melted, remove from the griddle and serve with decided toppings.
