Ingredients for Grilled Shrimp Skewers

  • Shrimp – Buy large shrimp for the most flavor. Peeled and deveined shrimp will to make preparation a breeze. Buy fresh or frozen and thaw in the fridge overnight if frozen.
  • Olive oil – This will help the seasonings stick to the shrimp. You can also use any other oil with a high smoke point like canola, avocado or sunflower.
  • Lemon juice – Offers a bright flavor and the acid helps to marinate the shrimp.
  • Seasoning – Sea salt, ground black pepper, Italian seasoning, paprika and garlic powder.
  • Fresh parsley – Fresh chopped parsley adds beautiful green color to this dish.
  • Lemon slices – Serve these on the side for a pop of color and burst of bright flavor.

How To Make Grilled Shrimp Skewers

Soak the wooden skewers in water.

Place olive oil, lemon juice, sea salt, pepper, Italian seasoning, paprika and garlic powder in a large bowl; whisk to combine.

Add the shrimp to the bowl and toss gently to coat evenly. Marinate for at least 15 minutes or up to 2 hours max.

Thread 4-6 shrimp on each skewer.

Heat a grill medium high heat and cook the shrimp for 2-3 minutes on each side until pink.

Serve warm with fresh parsley and lemon slices, if desired.

Storage and Reheating

Fridge: Store leftover grilled shrimp in an airtight container for 3-4 days. Remove shrimp from the skewers for easier storage.

Freezer: You can freeze leftover shrimp after it has cooled. Flash freeze on a pan and then store in a freezer bag. Reheat from frozen or thaw overnight in the fridge.

To reheat grilled shrimp, heat low and slow on the stovetop in a little bit of olive oil or butter. You can use the microwave, but be careful, overcooking can cause shrimp to have a rubbery texture. Heat in about 20 second increments until hot through.

Pro Tips

  • Large shrimp are more forgiving because they won’t overcook as quickly.
  • If you are going to be feeding a crowd and want to make your presentation a little fancier, you can sprinkle some lemon zest over the cooked shrimp to serve.

How Do I Know When Shrimp Is Fully Cooked?

Shrimp is unique because it changes color as it cooks. Shrimp starts grey and then turns opaque and pink when it is cooked. Shrimp will also curl up into a “C” shape when they are cooked. If you are new to cooking shrimp and a little unsure, I recommend using a meat thermometer to make sure the shrimp reaches 145 degrees Fahrenheit.

Ingredients

  • 1 pound large shrimp peeled and deveined
  • 3 Tablespoons olive oil
  • 1 Tablespoon lemon juice
  • ½ teaspoon Sea salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 Tablespoon Chopped fresh parsley for serving
  • Lemon slices for serving
