Easy Grilled Vegetables are the perfect recipe when you want a quick, flavorful side dish on your grill! It’s a mix of peppers, zucchini, summer squash, red onion, and mushrooms. Perfectly seasoned with spices and balsamic vinegar then grilled for the ultimate flavor. It pairs perfectly with steak, pork, chicken or any main dish that’s hot off the grill! I just can’t say no to those perfectly caramelized veggies on the grill!

The BEST Grilled Vegetables!

There’s nothing quite like eating grilled vegetables during the summer and fall months. That grilled taste and flavor can transform any vegetable into the perfect meal and appetizer. 

Plus, the bright colors add such a fun pop of color as well. 

I enjoy making a big batch of these on the weekend and then if I have any leftovers they are perfect for meal prep for lunches.

Light, easy and healthy means it’s a go-to recipe around here for making side dishes on the grill! I love pairing them with Grilled Teriyaki Chicken, BBQ Chicken on  the Grill or Grilled Ranch Pork Chops!

Another great thing is that this recipe is super flexible so I use whatever vegetables I have in the fridge that need to be used!

Are grilled vegetables healthy?

Of course! Any time that you can add in some vegetables to your daily meals, it’s always a great choice. Vegetables pack in a ton of nutrients to your meals! 

What vegetables can I grill?

This is entirely up to you. Some favorites are squash, zucchini, onions, and even potatoes. But don’t forget about asparagus and any other garden vegetables that you want to cook and eat! 
Things like cauliflower will take a bit longer to cook on the grill so make sure to cut those pieces smaller!

Can you freeze grilled vegetables?

You can but in my opinion, they’re better eaten fresh. The taste and flavor will be there once you thaw them, but their texture might be a bit mushy because of the change in temperatures. 

How do you store grilled vegetables?

Once they are cooled, stored them in an airtight container and keep them in the fridge. It’s really as simple as that.

How long do grilled vegetables last in the fridge?

Eating them within 48 hours after being grilled is a safe bet. Any longer than that and they might not be holding their shape or taste as much.

How do you reheat grilled vegetables?

Put them in a microwave-safe dish and warm them up in 30-second intervals. Or if you want to warm them up on the stove, put on a skillet and reheat them on low-heat as well.

Ingredients

  • 1 red pepper seeded and sliced
  • 1 zucchini sliced
  • 1 yellow summer squash sliced
  • 1 red onion quartered, sliced
  • 8 oz baby bella mushrooms washed and stemmed, sliced in half lengthwise
  • 2 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 6 cloves minced garlic
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper

Instructions

  • Clean and preheat grill to 350 degrees F.
  • Mix all ingredients in a bowl.
  • Spread vegetables out on a grill pan on grill and grill.
  • Stir about ever 15 minutes. Grill until vegetables are cooked through and caramelized about 30-45 minutes.
