It’s so easy to make that every the most novice smoked and baker can make it with delicious results.

Why this recipe works:

  • Make ahead friendly for the holidays! Make it in the morning before it gets crazy busy and just pull it out for dessert.
  • The perfect, subtle hint of smoked taste.
  • Option to bake it if you’d rather use your oven instead of smoking this dessert.
  • Let everyone top it with their favorite topping i.e. Cool Whip, Ice Cream or Homemade Whipped Cream. Maybe you’d rather eat it naked because it’s so good it doesn’t need a topping!

Ingredients Needed

With only a few simple ingredients needed to prepare this smoked dessert you can always make sure to have them on hand, so when you get a craving you can whip it up in no time at all!

  • Pumpkin Puree – Make sure not to grab the pumpkin pie puree because that already has spices added into it.
  • Pumpkin Pie Spice
  • Evaporated Milk
  • Eggs
  • Brown Sugar – Can substitute white sugar, but the brown sugar gives it a deeper taste that’s amazing.
  • Yellow Cake Mix
  • Butter – We used a salted butter.

Steps to Prepare

  • Mix – In a mixing bowl combine the pumpkin, pumpkin pie spice, evaporated milk, eggs and brown sugar until completely combined either by hand or with a hand or stand mixer.
  • Top – Pour batter into a greased 9×13 inch disposable aluminum pan. Sprinkle dry cake mix evenly over the top of the pumpkin batter. Placed sliced butter on top of cake mix evenly.
  • Smoke – Place dump cake on smoker and smoke for approximately one hour or until a knife inserted in the middle comes out clean.
  • Serve – Let cool for 10-15 minutes or until completely cooled so the toppings don’t melt. We love this a bit warm, but it can be served at room temperature too.

Expert Tips

This cake can also be baked in an oven instead of smoked on the smoker. Preheat oven to 350 degrees F and bake for approximately one hour or until top is golden brown and center is set.

When we smoked it on our Traeger we used a Hickory wood chip that added a subtle hint of smoked flavor to it.

Serve it with options to top it for a holiday meal like Cool Whip, Ice Cream or Homemade Whipped Cream.

This dump cake can be served warm or at room temperature. Make sure to let it cool about 15 minutes from when you remove it from the smoker if you are topping it so it doesn’t melt the topping as soon as it is topped.

Store any leftovers at room temperature for up to 3 days, but we recommend storing it in the refrigerator if it’s going to be leftover for more than a day.

This cake is fine to be left out at room temperature so it’s great to serve at holidays, potlucks and parties where food tends to sit out.
