Ingredients for Blackstone Blackened Chicken
- Chicken breasts – Use boneless, skinless chicken breasts to get the best results on the Blackstone griddle.
- Butter – Butter is used to adhere seasoning to the chicken as well as on the griddle to cook the chicken in, adding a rich flavor.
- Seasonings – Smoked paprika, onion powder, garlic powder, dried oregano, dried thyme, ground black pepper, Kosher salt and cayenne pepper. You can add more or less cayenne depending on how hot you like your chicken.
How to Make Blackened Chicken on The Blackstone
In a small bowl, mix together the rub ingredients and set aside.
Place the chicken breast on a cutting board and pat them dry with a paper towel.
Melt 3 Tablespoons of butter in a bowl. Brush the melted butter on the chicken breast and sprinkle with Blackened Rub. Flip chicken breast over and repeat on the other side.
Once Blackstone is preheated to high heat, melt the remaining 3 Tablespoons of butter on the cooking surface.
Place the chicken breasts on the Blackstone.
After about 4-5 minutes there should be a good char on the chicken, flip it over to cook the other side another 4-5 minutes.
Turn the heat down to medium, slide the chicken breasts together and cover with a dome. Cook until chicken reaches internal temperature of 165 degrees Fahrenheit.
Pull chicken off the grill, rest for a few minutes, and serve with your favorite side dishes.
Pro Tips
- You can mix the seasonings in a large zip top bag, add the chicken and shake it to coat after you have basted the chicken breasts with butter.
- Double or triple up the batch of seasoning and keep it on hand to use again another time.
- Make sure the griddle is preheated to high heat, or the chicken breasts will not properly.
Storage and Reheating
Fridge: Store blackened chicken leftovers in an airtight container up to 4 days.
Freezer: If you would like to freeze leftovers for another time, once cooled, wrap individually in plastic wrap and then store in a freezer bag or airtight container. Thaw in the fridge overnight.
To reheat leftover chicken, add a splash of water or chicken broth to a frying pan and heat covered on the stovetop until hot throughout.

Ingredients
- 4 boneless skinless chicken breasts
- 6 Tablespoons butter divided
Blackened Rub Ingredients
- 1 Tablespoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon Kosher salt
- ½ teaspoon cayenne pepper can add more or less depending on how hot you want it
Instructions
- Preheat Blackstone to high heat.
