I love making this Smoked Breakfast Fatty when I want to cook something fun and impressive for breakfast or brunch. It’s packed with all my favorite breakfast ingredients like sausage, eggs, hash browns, ham, and cheese, then wrapped in bacon and smoked until perfectly crispy. When I slice into it and see all those layers, I know it’s going to be a breakfast everyone will remember.

This isn’t the most popular breakfast dish, but it should be! It is loaded with smoked breakfast sausage, cheese, eggs, ham and hashbrowns. All of the best parts of a complete breakfast rolled into one!

I first tested this for Christmas Eve brunch for our family and it was a hit. Everyone raved about it and then men in our family definitely loved the combo of their favorite breakfast foods in one. That’s when I knew I had to share it with all of you!

It’s packed with protein and only takes about 15 minutes to prepare so I can get the rest of the brunch spread ready to go while it cooks in the smoker. This bacon wrapped fatty is easy to customize, sometimes I baste BBQ sauce on top toward the end of cooking, and always gets rave reviews from even my pickiest eaters.

Key Ingredients

  • Bacon strips – I recommend using thick cut slices of bacon so that they hold together when you weave them. Applewood smoked bacon always adds some extra smoky flavor.
  • Scrambled eggs – Make the best Scrambled Eggs and then use them in this recipe.
  • Diced ham – You can purchase pre-diced ham, or dice it yourself. This smoked fatty recipe would be extra good if you dice up some leftover Smoked Spiral Ham.
  • Shredded cheddar cheese – Shred your own cheddar cheese for the best meltability and flavor. Sometimes I switch up the cheese, depending on what I have in the fridge already.
  • Sweet and smoky rub – My spice rub is perfect to use on this breakfast fatty.
  • Hash brown patties – If you can’t find the patties in the freezer aisle, swap for tater tots.

Can I Add Any Different Fillings?

Sure! Add diced veggies, or any other filling that sounds tasty to you. If you like spicy food, add some hot peppers like jalapeños to your breakfast fatty.

How To Make A Bacon Weave

Lay down about six pieces of bacon vertically, and pull back every other piece of bacon halfway. Lay one slice of bacon horizontally across the vertical pieces of bacon that are laid flat, and then pull the other slices over. Take the opposite vertical slices and pull them back halfway. Lay another strip of bacon across horizontally, and pull the slices of bacon over again. Continue this process until you make a complete weave.

Pro Tips

  • Don’t overcook your fatty! Be sure to check it right at 45 minutes and get a good read on the internal temperature. If it’s done, pull it out and let it rest.
  • If you have trouble spreading your breakfast sausage across the bacon weave, use a rolling pin to easily roll it out.
  • I lean toward fruity woods like cherry, maple or apple when smoking pork.

Smoked Breakfast Fatty Recipe

Equipment

  • Smoker
  • Cutting Board
  • Meat Thermometer
  • Toothpicks
  • Box grater

Ingredients

  • 1 pound bacon strips thick cut
  • 1 pound ground breakfast sausage
  • 4 large eggs cooked, scrambled
  • 4 ounces diced ham diced
  • 1 cup cheddar cheese shredded
  • 1 Tablespoon Sweet & Smoky Rub
  • 2 hash brown patties thawed

Instructions

  • Preheat the smoker to 350 degrees Fahrenheit.
  • Make a bacon weave on a piece of plastic wrap. Top with pork sausage and spread out into an even layer.
  • Put hash brown patties in the center of sausage on the bacon weave.
  • Spoon prepared scrambled eggs into the center of the hash brown patties. Sprinkle diced ham and shredded cheese on top of the scrambled eggs.
  • Gently lift up one end of the plastic wrap and begin rolling your fatty. Once the roll is completed, remove the plastic wrap and secure the ends of the bacon together with toothpicks.
  • Season liberally with sweet and smoky rub.
  • Place prepared breakfast fatty on the preheated smoker. Close the lid and smoke 45-55 minutes or until the internal temperature is 165 degrees Fahrenheit.
  • Remove from the smoker and allow to rest for 4-5 minutes before slicing and serving.

Tips

Fridge: Store leftover breakfast fatty in an airtight container for up to 4 days.
Freezer: Wrap individual slices in plastic wrap once cooled and store in an airtight container or freezer bag. Thaw in the fridge overnight before reheating.
You can reheat the breakfast fatty in the microwave or oven. Cut a slice to heat up in the microwave, or place the rest of the fatty in the oven at 350 degrees Fahrenheit until warmed through.
