This double smoked ham — a spiral ham that’s smoked low and slow twice before being brushed with a honey glaze — delivers deep, smoky flavor and juicy, tender meat that’s perfect for holiday feasts or weekend celebrations.

Smoked Spiral Ham Pieces

This delicious smoked ham is the perfect meal for when you entertaining family and friends for a Sunday dinner or for the holidays. This will be a regular on our rotation for meals like Thanksgiving, Christmas and Easter. We love serving it with smoked Dinner Rolls and Apple Pie but anything goes!

Ingredients for Double Smoked Spiral Ham

  • Ham – We prefer a bone-in spiral ham. The bones gives it extra flavor and since it is spiralled, there is more surface area for the glaze to cover.
  • Ginger ale – This is our secret ingredient to add moisture and flavor.
  • Brown sugar – Allows the glaze to really caramelize.
  • Honey – Adds a touch of sweetness and moisture.
  • Apple cider vinegar – This will help to tenderize and flavor the ham.
  • Garlic – Enhances the overall flavor profile of the spiral ham.
  • Dijon mustard – You can also use prepared yellow mustard if you prefer, we just love the flavor the dijon adds.

How Much Ham Do I Need Per Person?

If you are using a bone-in ham you’ll need approximately 3/4 pound per person that you are planning to serve. I like to plan for 1 pound because the leftovers are so amazing!

How To Cook Double Smoked Ham

  1. In a small saucepan, bring ginger ale, brown sugar, mustard, honey and apple cider vinegar to a boil. Cook until reduced by half, about 15 minutes. Stir in remaining ingredients; cook 5 minutes longer. Remove from heat.
  2. Lay the ham cut side down in a large foil pan. Pull the slices apart one by one and drizzle honey glaze down in between the pieces. You will want to hold the front so the slices do not fall all the way over and tear. After that brush the top of the ham with glaze.
  3. Place the pan on the preheated smoker and close lid for about 3 hours. Baste the ham every hour with more of the glaze.

  • Make a beautiful presentation for a holiday meal by garnishing your ham with an assortment of herbs and fruit such as grapes.
  • Simply grab a few toothpicks and pin the slices up on the ham while smoking if they start to fall.

Twice Smoked Ham

Equipment

  • Disposable pan
  • Basting brush
  • Small saucepan
  • Measuring cups and spoons
  • Meat Thermometer

Ingredients

  • 8-10 pounds smoked spiral ham

Honey Glaze

  • 2 ¼ cups ginger ale
  • 1 cup brown sugar packed
  • 1 ½ teaspoons Dijon mustard
  • 3 Tablespoons honey
  • 4 ½ teaspoons apple cider vinegar
  • 2 garlic cloves minced

Instructions

  • In a small saucepan, combine ginger ale, brown sugar, mustard, honey and apple cider vinegar. Bring to a boil. Cook until glaze is reduced by half, about 15 minutes. Stir in minced garlic and cook 5 minutes longer. Remove from heat.
  • Remove all of the netting and wrapping from the ham and lay the ham in a large foil pan, cut side down. Pull the slices apart one by one and drizzle honey glaze down in between the pieces. You will want to hold the front so the slices do not fall all the way over and tear. After that brush the top of the ham with glaze.
  • Prep your smoker according to manufacture's directions. We used cherry wood pellets in our Traeger electric smoker. Set your smoker for cooking at about 230 – 240 degrees Fahrenheit. Place the pan with the spiral cut ham on the smoker grates and close lid. Baste the ham every hour with more of the glaze.
  • The smoking process will take 3 hours. This is a double smoked ham so the ham is already cooked, this process adds more smoke flavor and the glaze.

Tips

Fridge: Store leftovers in an airtight container or zip top bag for up to a week.
Freezer: Slice and store in a freezer bag or airtight container. Thaw in the fridge overnight before reheating.
Reheat double smoked ham easily in the microwave until hot. You can also heat these leftovers up covered on the stovetop or in the oven. Just add a little ginger ale or water for moisture so the ham doesn’t dry out.

Why is it called “Double Smoked” Ham?

Did you know that all pork products labeled “ham” have been cured with a nitrate curing solution to give them their pink color and tender texture? They are also all pre-cooked and most are labeled as “smoked”.

Technically you can serve them straight out of the package, but we are going to put ours on the Traeger electric smoker so we have a twice smoked ham and add an amazing honey glaze!

This is why it’s called a double or twice smoked ham, and even though it is smoked on your Traeger for the second time the smoke flavor is not overwhelming.
