Pulled Pork Chili

Pulled pork chili is what I make when I need to use up leftover pulled pork but nobody wants the same thing twice. It comes together in 30 minutes, it is hearty enough to stand up to a cold night, and the smoky pork makes it taste like it simmered all day.

- Leftover pulled pork – This is seriously the best way to repurpose leftover pulled pork. It is also possible to use leftover smoked brisket or ground meats like chicken, turkey or the traditional beef. Be sure to brown the ground meat before adding anything else to the pot.
- Corn – Canned corn and frozen corn both work. You can even remove the kernels off of smoked corn on the cob for an extra smoky flavor.
- Beef broth – Chicken broth works in this pulled pork chili recipe too.

Toppings for Pulled Pork Chili
There are loads of fun toppings to add to this yummy chili recipe. Here are a few of my household favorites:
- crushed corn chips
- shredded cheddar cheese
- sour cream or plain Greek yogurt
- diced avocados
- sliced jalapeño peppers
- fresh cilantro
- salsa
- diced red onion
- green chiles
- diced green onion
How to Make Pulled Pork Chili
- Sauté pork. Add leftover pork in a single layer to preheated pot and sauté for 4-5 minutes until crispy on the bottom side.
- Simmer. Add the remaining ingredients, stir to combine and bring to a boil. Reduce heat and simmer for about 15-20 minutes.
- Add toppings and enjoy. Scoop into bowls, add desired toppings, then serve and enjoy.

Can I Make Pulled Pork Chili In The Crock Pot?
Yes! You can combine all of the ingredients for pulled pork chili in the Crock Pot on low for the day to simmer and meld the flavors together and come home to an amazing dinner!
Double the recipe and once cooled, freeze half of the chili for another night. Thaw in the fridge overnight before reheating. Your future self thanks you!
Storage and Reheating
Fridge: Store leftovers in an airtight container for up to 4 days.
Freezer: You can also freeze chili in air tight containers or resealable bags. If you use a container make sure there is enough room for expansion as the chili freezers. When using resealable freezer bags make sure to squeeze as much air out of the bag as possible when you seal it.
To reheat chili, cover and use the stovetop or microwave until hot throughout.
Serving Suggestions
This easy chili goes really well with some fresh Cornbread and some Dinner Rolls on the smoker would be great too. You can also make some fluffy breadsticks to dunk in the chili.
A side of Smoked Mac and Cheese or Mashed Potatoes would also go well with this pulled pork chili. There are so many delicious options to serve with this hearty chili, or just eat it as it’s own full meal.
Pro Tips
- If you have more than 2 cups of leftover pulled pork, just add a bit extra of each ingredient to make a larger batch of chili.
- To serve this at a party, keep it warm in a slow cooker or an Instant Pot on the keep warm function.
- Make sure you shred the pulled pork into small chunks so that it can be evenly incorporated throughout the chili.
- If your family likes a little extra heat, use fire-roasted tomatoes or Rotel and add a diced jalapeño or more chili powder with a pinch of cayenne.

Ingredients
- 2 cups leftover pulled pork
- 1 Tablespoon olive oil
- 2 cans petite diced tomatoes (14.5 oz each)
- 15 ounces corn drained
- 15.5 ounces chili beans
- 1 Tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon sweet and smokey rub
- 1 cup beef broth
- Additional toppings; crushed chips, shredded cheese, sour cream, avocados etc
Instructions
- In a large dutch oven heat olive oil over medium heat. Add leftover pork in a single layer. Saute about 4-5 minutes or until crispy on bottom side and warm.
- Add in the rest of the ingredients and bring to a boil. Reduce heat and simmer for about 15-20 minutes or until warmed through.
- Serve immediately. Top with crushed chips, sour cream, shredded cheese, avocados etc.
