Corn on the cob is a classic side dish that makes a great addition to cookouts and BBQs. But making it in the pellet grill is a game-changer. Smoked corn on the cob has so much flavor and makes the most tender kernels of corn!

You can even use it instead of grilled corn in this recipe for Mexican street corn. There are so many different ways to use this incredible smoked corn on the cob without the husks. It’s a favorite corn recipe of ours in the summer and we love making it on our electric smoker!

These yummy ears of sweet corn are just packed with a great smoky flavor and pair well with any main dish that’s why it’s one of our favorite ways to enjoy fresh corn.

Skip boiling that corn on the cob and use this method of cooking instead. It’ll turn out better, make much less of a mess, and will be the best corn on the cob you’ve ever tasted!

Why You’ll Love Smoked Corn on the Cob

  • You can complete this recipe in just about an hour. And while it’s cooking in the smoker, you can take care of other things for your meal!
  • This is a great way to get veggies in your diet. Picky eaters won’t turn up their noses to corn that is packed with a flavorful punch!
  • Double or triple this recipe, even quadruple it depending on the size of your smoker. Then you will have plenty of corn for your party or get-together.

Ingredients for Smoked Corn on the Cob Recipe

  • Corn – This recipe uses 5 ears of fresh corn, and you will need to remove the husks before smoking them. Just pull husks off and remove the silk. We prefer this method because the smoke flavor goes deeper into the corn!
  • Salt – While you can use any of your favorite seasonings on corn, simple salt works great on the smoker.
  • Butter – You can use salted or unsalted butter on your corn. If you use salted, then you will likely need to reduce the amount of salt that this recipe calls for. Another option would be olive oil, but buttery corn is the way to go!

How to Smoke Corn on the Cob

  1. Preheat your smoker to 225 degrees Fahrenheit.
  2. Then melt the butter in a small bowl and mix in the salt. Brush half of the butter mixture all over each ear of corn.
  3. Once the smoker is fully heated to 225 degrees Fahrenheit, place corn directly to the smoker grates. Close the lid and smoke the corn on cob for 25 minutes.
  4. Then, flip the corn and brush each ear with the remaining butter. Smoke the corn for 20 minutes or until the corn is completely cooked and can be pierced easily with a fork.
  5. You’ll want to watch the corn closely toward the end so that the kernels don’t start to shrivel and get tough.
  6. Remove the corn from the smoker, let it cool until it reaches a safe temperature to eat, grab your corn holders and then serve!

How to Store Leftover Smoked Corn on the Cob

FRIDGE: Wrap leftover corn on the cob in foil or place in a plastic zip top bag. Store in the fridge for 2-3 days. You can also cut the corn off the cob and store in an airtight container for 2-3 days.

FREEZER: It freezes best when cut off the cob. Place into an airtight container or freezer safe bag and freeze for up to 2 months.

What flavor of wood chips should I sue?

A great wood chip option when you are using your pellet smoker to make fresh ears of corn is applewood. Other great options are peach, cherry, hickory, mesquite and maple. Or try a variety bag!

What to Serve with Smoked Corn on the Cob

Classic BBQ foods are my favorite things to serve with smoked corn! These smoked chicken thighs and smoked chicken breasts are both great to pair with this corn. Smoked burgers are a always a hit too!

Smash burger sliders pair great with corn as well. Make a hearty Blackstone steak or steak bites and then serve corn as a flavorful veggie side alongside the protein.

Corn is also a classic side for smoked beef ribs and BBQ smoked meatloaf. You can also simply serve it alongside some smoked hot dogs and smoked brats for game day!

Ingredients

  • 5 ears corn peel back the husks, take silk off and discard aka shucked corn
  • ½ cup butter melted
  • ½ tsp salt

Instructions

  • Preheat the smoker to 225 degrees Fahrenheit.
  • In a small bowl, melt the butter and mix in the salt. Brush half of the butter mixture all over the corn.
  • Once the smoker is heated to 225 degrees Fahrenheit, add then butter corn on the cob directly on the smoker grates. Close the lid and smoke corn on the cob for 25 minutes.
  • Flip corn, brush the remaining butter seasoning on top of the corn, and smoke for an additional 20 minutes or until corn is completely cooked and easy to pierce with a fork. Watch closely as you want to take it off as soon as the corn is done or the kernels start to shrivel and get tough.
  • Remove smoked corn from the smoker, let it cool until it’s safe to eat, and enjoy.

Can I smoke corn with the husks on?

Some people prefer to Traeger corn on the cob with the corn husk on, but we have seen better results by making smoked corn on the cob without husks. The smoky flavor penetrates deeper into the veggie, and the corn kernels are much more tender.

Pro Tips

  • Feel free to change up the flavors you use in your butter. You can make garlic butter, mix in garlic powder or add a spicy kick with chili powder, or even use some BBQ seasoning or Sweet & Smoky rub!
  • When basting the corn, place it on a rimmed baking sheet so that the melted butter that rolls off the corn is contained.
  • Don’t forget to rotate the corn and baste it! This will ensure all of the kernels are coated in butter and the corn cooks evenly.
