I needed a new way to mix it up with my leftover pulled pork and these amazing Pulled Pork Enchiladas happened. Corn or flour tortillas filled with pulled pork, stuffed with cheese and doused in red enchilada sauce, it doesn’t get any better. This is a super tasty and easy meal!

I always pick a large pork butt to smoke just so I’m conveniently left with some pulled pork to stick in the freezer. I divide it out into portions of about 2 cups and freeze it. Then it’s nice and handy to pull out of the freezer and use in meals like this enchilada recipe.

Ingredients For Pulled Pork Enchiladas

  • Olive oil – You will use this to fry the pork when you are warming it up. You can also use vegetable or canola oil, but we like the flavor from the olive oil.
  • Pulled pork – This is a perfect way to repurpose the delicious leftover Pulled Pork you made on the weekend. If you have leftover pulled beef or chicken, you can use those in place of pork, too.
  • Red enchilada sauce – Use your favorite storebought enchilada sauce or try making your own homemade sauce.
  • Pepper jack cheese – Buy the block and shred it yourself for the best melty, gooey cheese topping. Colby jack is also a great substitute.
  • Tortillas – Enchiladas are traditionally made with corn tortillas. White corn tortillas are a little more tender, yellow have more texture – use your favorite! You can also use flour tortillas if you prefer.

How To Make Pulled Pork Enchiladas

  1. Add olive oil to a skillet over medium heat. Add pulled pork to pan, cook until warmed through.
  2. Place pulled pork in mixing bowl. Add half of one can enchilada sauce and cheese. Stir to combine.
  3. Spread the other half enchilada sauce on the bottom the pan.
  4. Divide pork filling between tortillas. Roll up tortillas and place seam side down in baking dish.
  5. Pour remaining enchilada sauce over the top of the tortillas.
  6. Bake for 15 minutes. Remove and top with remaining cheese.
  7. Bake for another 10 minutes or until heated through and cheese is melted.

Storage And Reheating

Fridge: Store covered in plastic wrap or in an airtight container for up to 4 days.

Freezer: If you are making this dish ahead to freeze, do so before baking and then bake from frozen. If you are freezing leftovers, allow to cool completely before covering in plastic wrap and foil.

Reheat leftover enchiladas in the oven preheated to 350 degrees Fahrenheit for about 10-15 minutes, until hot throughout. You can also reheat them individually in the microwave.

Pro Tips

  • If you are looking to lessen the spicy level of the recipe use mild red enchilada sauce.
  • Corn tortillas are easiest to work with when they’ve been warmed slightly. To do this, warm them in the microwave for about 1 minute wrapped in damp paper towel.
  • A great way to transport enchiladas to a friend is by preparing them in a disposable aluminum pan so they don’t have to worry about returning your dish.

Can I Prepare Enchiladas In Advance?

Absolutely! Prepare the enchiladas but wait to pour the sauce until you’re ready to put them in the oven.

Can I Freeze Leftover Pulled Pork?

Yes! Leftover pulled pork flavored with dry rub can be stored in the freezer for about 3 months when well wrapped. Just be sure to shred it first! Thaw overnight in the fridge to use in meals the next day.

Pulled Pork Enchiladas Recipe

Equipment

  • 9×13 casserole dish
  • Measuring cups and spoons
  • Box grater
  • Skillet

Ingredients

  • 2 cups pulled pork leftovers
  • 1 Tablespoon olive oil
  • 2 cans red enchilada sauce 10 ounces each
  • 2 cups pepper jack cheese shredded
  • 8 corn tortillas

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Heat olive oil in skillet over medium heat. Add leftover pulled pork to pan and cook until warmed through, about 2-3 minutes. Do not overcook or it will become dry.
  • Add warm pulled pork to mixing bowl. Add half can of enchilada sauce to mixing bowl and ½ cup of shredded pepper jack cheese. Stir to combine.
  • Spread the rest of the can of enchilada sauce on the bottom of a 9'' x 13'' inch casserole dish.
  • Evenly divide pulled pork filling between tortillas. Roll up tortillas and place seam side down in baking dish. Pour the remaining can of enchilada sauce over the top of the tortillas.
  • Place in preheated oven and bake for 15 minutes. Remove and top with remaining cheese. Place back in oven for 10 minutes or until heated through and cheese is melted.
  • Remove from oven and let stand 5 minutes before serving. Top with diced tomatoes and avocado.

How To Serve Pulled Pork Enchiladas

Pulled pork enchiladas are a filling meal on their own, especially when you add different toppings to them. Serve a side of your favorite tortilla chips with homemade Smoked Salsa or Corn Salsa, two popular side dishes in our house. Leftover enchilada filling is also great on a bed of rice.

Serve these up with a Paloma or a Spicy Margarita if you’re hosting friends.

    These sound delicious, and I plan on making them tonight, but I’m curious as to how you came up with the serving size. I know serving size is just a suggestion, but why did you choose a number that would leave us dividing an enchilada into thirds?

    Used green enchilada sauce – just my preference and doubled the recipe- a very hungry 18 yr old requires a packed tortilla! 🤗. So easy and tasted wonderful! Loved the fresh tomato and avocado on top!
