Tender bell peppers stuffed with a delicious ground beef and Italian sausage mixture that are smoked on your Traeger grill. These Smoked Stuffed Peppers are a low carb, healthy and easy dinner recipe that have a delicious smoked flavor. If you are looking for an easy smoked dinner recipe this is it!

Tender peppers stuffed with a delicious blend of ground beef, Italian sausage, onions and peppers make these Smoked Stuffed Peppers a delicious dinner recipe.

This recipe doesn’t use rice so it’s low carb. You could cut back on the ground meat and add in some cooked rice if you’d prefer that!

  • The smoky flavor from these stuffed peppers sets them apart from other recipes. Dare I say that smoked flavor is even better when you reheat the leftovers?

Smoked Stuffed Pepper Ingredients

  • Bell Peppers – We think red, orange and yellow bell peppers give it a better flavor but you can also use green peppers.
  • Meat – We used a mixture of ground beef and Italian Sausage, but you could use ground turkey, pork or chicken too. Another option would be to cut the meat in half and add in some cooked white or brown rice.
  • Onion & Garlic – Create a depth of flavor in the mixture.
  • Cilantro – Optional, but gives it flavor. You could also use parsley if you don’t like cilantro.
  • Olive Oil – Used for sautéing, you could also use vegetable oil, canola oil or butter.
  • Mozzarella Cheese – For more flavor, you could substitute 1/4 cup of the mozzarella cheese for Parmesan. Remember to grab the block of cheese and shred it yourself for the ultimate meltability! Of course, if all you have is cheddar cheese, that will work great too!

How to Cook Smoked Stuffed Peppers

  • Prep Smoker – Preheat the smoker to 300 degrees Fahrenheit according to manufacture’s directions.
  • Prep Peppers – Prepare the bell peppers by cutting off the tops and removing the stems/seeds. Save the top of the pepper to dice and add into the stuffing.
  • Cook Meat – In a large pan over medium heat, brown the ground beef and ground sausage. Once cooked, drain the meat and set aside.
  • Cook Vegetables – Sauté the onions and diced pepper tops with a splash of olive oil for about 5 minutes. Add the garlic and continue to cook until the vegetables start to soften, about 3 minutes.
  • Combine – Combine the meat mixture and the vegetables in a bowl and stir in the shredded cheese, leaving about half to top the peppers with later.
  • Stuff Peppers – Fill each bell pepper with the ground meat and vegetable stuffing mixture.
  • Smoke – Place the peppers directly on the grill grate in the smoker, making sure to set them so they won’t fall over while cooking on the grates. Cook time for smoked peppers is about 50 minutes, after which they should be slightly brown and tender, but the peppers should still have a bit of firmness. You don’t want them to be soggy. Top the peppers with the rest of the mozzarella cheese and smoke for about another 10 minutes, or until the cheese has melted.
  • Serve – Carefully remove from the smoker, garnish with cilantro and serve.

What are good alternatives for a vegetarian?

A great way to get your protein in these stuffed peppers without using meat is to substitute black beans. Since 2 pounds of black beans would probably be a bit of an overload, you can also add some rice and different veggies like corn and zucchini.

What flavor wood chips are best for smoking stuffed peppers?

Each wood will provide a different flavor so have fun and mix it up. We use a mesquite in this recipe for its bold taste.

We also love using a competition style blend of wood chips.

How long does it take to smoke peppers?

In total, about one hour. First, you will smoke the stuffed peppers for about 50 minutes and then an additional ten minutes after adding your shredded mozzarella.

Can I also grill or bake stuffed peppers?

These can also be on your grill over indirect heat if you’d like to do that. Preheat grill to 350 degrees Fahrenheit, place the stuffed peppers over indirect heat with lid closed for 30-40 minutes or until the peppers are soft. Top with Mozzarella cheese, close lid and grill an additional 5-10 minutes or until melted.

In the oven at 400 degrees Fahrenheit in baking dish covered with foil for 35 minutes. Uncover and, top with additional mozzarella cheese and bake until cheese is bubbly about 10 minutes more.

How to store leftovers

If you have leftovers, place them in an airtight container after they have cooled and store in the refrigerator for up to 3 days.

You can also freeze extra stuffed peppers for a meal at a later date. Once they are fully cooled, wrap in plastic wrap and keep in an airtight container in your freezer.

When ready to enjoy, set them on a pan and reheat in the oven at 350 degrees Fahrenheit until warmed through.

You can also warm them in the microwave to reheat but the pepper will get mushy.

A fun option might also be to roughly chop up a leftover stuffed pepper and add it to some delicious nachos!

Ingredients

  • 6 bell peppers
  • 1 pound ground beef
  • 1 pound ground Italian sausage
  • 1 onion diced
  • 4 cloves garlic minced
  • 16 ounces mozzarella cheese shredded
  • Cilantro for garnish
  • Olive Oil

Instructions

  • Preheat the smoker to 300 degrees Fahrenheit according to manufacturer's instructions.

  • Smoke the peppers for about 50 minutes, they should be slightly brown and tender, but the peppers should still have a bit of firmness. You don’t want them to be soggy.
  • Top the peppers with the rest of the shredded mozzarella cheese and smoke for another 10 minutes, or until the cheese has melted.
  • Carefully remove peppers from the smoker, garnish with cilantro or parsley, and serve.
