This one-dish griddle meal has got it all. Tender ribeye, smoky kielbasa, tender potatoes and juicy veggies are bound to satisfy everyone at the dinner table. This unique dish is loaded with flavor thanks to a creamy Worcestershire-BBQ dressing coating every piece of protein and each veggie. It’s one of our family’s favorite griddle recipes for camping, and with good reason because there is just so much flavor.

Whether you are camping, tailgaiting or preparing this dish in the comfort of your own back yard, the delicious smell will have the neighbours making their way over. This meal made with tender meat, and veggies topped with a slightly tangy, yet creamy dressing is bound to become highly requested in your house. Ingredients For Blackstone Cowboy Stir Fry

  • Olive oil – Use olive oil or another oil with a high smoke point to coat the potatoes, protein and veggies to cook to perfection.
  • Russet potatoes – Blackstone grilled potatoes add so much flavor and texture to this dish. Russets are best because they are slightly fluffy and mix well with the rest of the ingredients in this flavorful dish.
  • Seasoning – Paprika, garlic powder and Cajun seasoning are all you need for this dish. If you can’t find Cajun seasoning, it is typically a mix of paprika, cayenne pepper, garlic powder, onion powder, black pepper, oregano and thyme.
  • Yellow onion – Onion adds texture to this dish and of course so much flavor.
  • Zucchini – Adds mild flavor and loads of nutritional value to cowboy stir fry, plus it softens easily, helping this dish to be ready to eat in no time.
  • Red bell pepper – The sweetness of the red bell pepper balances out the flavors of the cowboy stir fry.
  • Kielbasa sausage – A popular choice when it comes to the Blackstone griddle, kielbasa grills well and has so much flavor to offer.
  • Ribeye steak – Cooks quickly on the Blackstone griddle and offers loads of flavor. In it’s place, you can use chuck eye steak, top sirloin, flat iron or flank steak.

For the Dressing

  • Mayonnaise – This is the creamy base for the stir fry dressing.
  • BBQ sauce – Use your favorite store bought or make a batch of homemade to keep on hand.
  • Worcestershire sauce – This adds depth of flavor, a little bit of umami, to the dish.
  • Spicy brown mustard – If you don’t have spicy brown mustard on hand, use Dijon mustard in it’s place.
  • Hot sauce – Use your favorite brand of hot sauce. If you’re not huge on heat, start with a little, taste and build as you go.

How To Make Blackstone Cowboy Stir Fry

  1. In a medium mixing bowl add all the dressing ingredients and mix until combined. Set aside.
  2. Spread approximately 1 Tablespoon of the oil onto the grill. Add the potatoes to the griddle in a single layer, toss to coat the potatoes with the seasoning mixture and the oil.
  3. Squirt some water onto the potatoes and cover with a dome or the lid of the Blackstone grill for 4-5 minutes. Toss the potatoes, squirt more water onto the potatoes, cover and cook for 4-5 more minutes until browned and tender.
  4. Meanwhile add the remaining oil to a separate section of the grill and add the sauté veggies for a few minutes until soft and browned. Move to the cooler side in the griddle.
  5. Add the sausage and steak to the griddle and cook for 5-7 minutes until browned and the steak is cooked to your liking.
  6. Toss potatoes, sausage, and steak into the vegetable mixture and pour the dressing mixture over it. Stir until everything is coated and cook for another 2-3 minutes.
  7. Remove from the griddle, let rest for a few minutes and then it’s ready to serve and enjoy.

Ingredients

  • 2 Tablespoons olive oil divided
  • 3 pounds russet potatoes diced
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon Cajun seasoning
  • ½ medium yellow onion cut into 1 inch chunks
  • 2 medium zucchinis cut into 1 inch chunks
  • 1 red bell pepper cut into 1 inch chunks
  • 2 Kielbasa sausages sliced into approximately 1 inch thick slices
  • 1 ½ pounds ribeye steak cut into 1 inch chunks

For the Dressing

  • ½ cup mayonnaise
  • 2 Tablespoons BBQ sauce
  • ½ Tablespoon Worcestershire sauce
  • ½ Tablespoon spicy brown mustard
  • 1 teaspoon hot sauce

Instructions

  • Preheat the Blackstone grill over medium high heat until it reaches approximately 350 degrees Fahrenheit.
  • In a medium mixing bowl add all the dressing ingredients and mix until combined. Set aside.
  • Spread approximately 1 Tablespoon of the oil onto the grill. Add the potatoes in a single layer and season them with the paprika, garlic powder and Cajun seasoning. Toss to coat the potatoes with the seasoning mixture and the oil.
  • Squirt some water onto the potatoes and cover it with a dome or the lid on the Blackstone grill. Cook the potatoes for 4-5 minutes. Toss the potatoes, squirt more water onto the potatoes, cover and cook for 4-5 more minutes until browned and tender.
  • While the potatoes are cooking, add the remaining 1 Tablespoon oil to a separate section on the grill and add the cut veggies and sauté for a few minutes until soft and browned. Move to a cooler side on the griddle.
  • Add the kielbasa sausage and cubed steak to the griddle and cook for 5-7 minutes until browned and the steak is cooked to your liking.
  • Toss the potatoes, sausage, and steak into the vegetable mixture and pour the dressing mixture over all of it. Stir until everything is coated and cook for another 2-3 minutes.
  • Remove from the griddle, let rest for a few minutes and then it’s ready to serve and enjoy!

Freezer: We do not recommend freezing leftovers of this dish. The thawed and reheated dish will not hold up as well as when it is fresh.
Reheat back out on the Blackstone griddle, or covered on the stovetop to retain moisture, until heated through.
