- Chicken – Boneless, skinless chicken breasts cut into cubes work great. Cut them in a uniform size so they cook at the same rate. You can use chicken thighs, just keep an eye on the internal temperature because cook time will vary.
- Olive oil – Use any high heat oil, this will help the seasoning stick to the chicken.
- Seasonings – Garlic powder, kosher salt, ground black pepper and paprika are the only seasonings you need.
- Mayonnaise – The rich, creamy base for our delicious bang bang sauce.
- Sweet chili sauce – Cuts the tang of the mayonnaise.

How To Make Grilled Bang Bang Chicken Skewers
Soak wooden skewers in water for at least 30 minutes to prevent burning.
In a small bowl, add mayonnaise, sweet chili sauce and sriracha. Mix well.
Add cubed chicken, olive oil, garlic powder, kosher salt, ground black pepper and paprika to a large bowl. Stir until chicken is well coated in seasoning.
Slide chicken cubes onto skewers and set on a plate or tray.
Place chicken skewers onto preheated grill for about 7 minutes, turn and cook for 7-8 more minutes until internal temperature of chicken reaches 165 degrees Fahrenheit.
Remove cooked chicken and place on a tray or baking sheet. Brush with bang bang sauce before serving immediately.
Pro Tips
- Use your own judgement and think about who will be eating when you add the sriracha – you can use more or less depending on whether you will be feeding spicy food lovers or not.
- If you have a lot of leftovers, whip up a new batch of bang bang sauce when you reheat them to bring them back to life.
Storage and Reheating
Fridge: Store leftovers in an airtight container for up to 4 days. Remove from skewer for storage and easier reheating.
Freezer: Freeze seasoned chicken for another time, but leave the bang bang sauce off of it if possible. Thaw in the fridge overnight before reheating and brush with bang bang sauce when ready to serve.
Reheat on the grill or in the oven at 350 degrees Fahrenheit about 10 minutes or until hot throughout.
Can I Prepare Bang Bang Chicken Ahead of Time?
You can season and skewer chicken about a day in advance and store in an airtight container in the fridge. Remove skewers from the fridge while grill preheats so the chicken isn’t as cold when it is added to the grill. It will cook more evenly this way.
You can also freeze seasoned chicken to use another time. Thaw in the fridge overnight before adding to the skewers. Make a fresh batch of bang bang sauce to coat them in upon cooking.

Ingredients
Chicken
- 2 pounds boneless skinless chicken breasts cut into 1-inch cubes
- 1 Tablespoon virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
Bang Bang Sauce
- ¾ cup mayonnaise
- 1 ½ Tablespoons sweet chili sauce
- 3 teaspoons Sriracha
Instructions
- Soak the wooden skewers for at least 30 minutes before using.
- Preheat the grill to 350 degrees Fahrenheit.
- In a large bowl, combine the cubed chicken breasts, oil, garlic powder, salt, pepper and paprika. Stir until all the chicken is coated evenly.
- Put the chicken cubes onto the skewers and place on a plate.
- Place the chicken on the preheated grill and cook for 7 minutes with the lid closed, then flip and cook for another 7-8 minutes or until the internal temperature is 165 degrees Fahrenheit.
- While the chicken is cooking, in a small bowl, add the mayonnaise, sweet chili sauce, and Sriracha. Mix well.
- Once chicken is done, remove from the grill and place on a baking sheet. Then drizzle or brush the chicken with the bang bang sauce. Serve immediately.
