These Smoked Hasselback Potatoes are a flavorful side dish featuring thinly sliced potatoes infused with smoky flavor, crispy edges, cheese and buttery goodness.

Ingredients for Smoked Hasselback Potatoes
- Potatoes – Washed and dried, Russet potatoes are the best variety for this dish. Yukon Gold are another good option for making Hasselback potatoes.
- Butter – Melted salted or unsalted butter adds richness to the Hasselback potatoes.
- Garlic – Fresh, minced garlic adds a punch to this dish. If you don’t have cloves of garlic on hand, use 1/2 teaspoon garlic powder.
- Cheese – Sliced sharp cheddar gives the best flavor in the opinion of our household but use your favorite, or whatever you have on hand.
- Chives – Fresh chopped chives are the yummiest garnish for loaded potatoes.
- Seasonings – Season with salt and ground black pepper, to your tastes.

How to Make Smoked Hasselback Potatoes
- Cut each potato so there are about 8 slices, making sure not to cut through the bottom of the potato. We recommend placing chopsticks on each side of the potato so you can’t cut all the way through it.
- Place each potato onto the center of a heavy duty aluminum foil sheet about 14” x 12”.
- Combine melted butter and garlic in small bowl and brush it over potatoes.
- Wrap up foil around potato and place on the smoker for about 40 minutes or until fork tender.
- Remove from smoker, cut slices cheese into smaller pieces and place inside the slices of potato. Place back on the smoker to melt.
- Remove from smoker and sprinkle with chives. Serve immediately.
Pro Tips
- Make sure your potatoes are a similar size so they cook at the same rate.
- Keep the potato on top of the aluminum foil in the smoker so the cheese doesn’t melt off.
Storage and Reheating
Fridge: Store leftover potatoes in an airtight container for 3-5 days, although they are definitely the best the day you make them. Remove them from the foil before storing.
Freezer: You can freeze Hasselback potatoes to enjoy another time. Skip the final step of adding the cheese and let them cool. Once cooled, wrap individually in plastic wrap before storing in a freezer bag. Thaw in the fridge overnight and add the cheese when you are ready to enjoy them.
To reheat leftovers, use the microwave in 30 second increments until hot through. The microwave won’t give you as crispy of a skin, though, so you can also reheat in your oven at 350 degrees Fahrenheit until hot through, about 15-20 minutes.

- 4 Russet potatoes medium sized, washed and dried
- ¼ cup butter melted
- 2 teaspoons garlic minced
- 8 slices cheddar cheese sharp
- 2 Tablespoons chives chopped
- salt and pepper to taste

- Start smoker and set it to 350 degrees Fahrenheit.

- Place each potato onto the center a heavy duty aluminum foil sheet about 14” x 12”.
- Combine melted butter and garlic in small bowl and brush it on potatoes making sure to get in between the slices.
- Wrap around potato and place on the smoker for about 40 minutes or until fork tender.
- Remove from smoker, cut each piece of cheese into about 8 slices and place one in between each slice of potato. Place back on the smoker to melt, without wrapping the foil around them.
- Remove from smoker and sprinkle with chives. Serve immediately.

How To Serve Hasselback Potatoes
We love adding Hasselback potatoes to any meal, especially when we can make Easy Smoked Vegetables at the same time. They are great as a side with a juicy chicken breast even on a busy weeknight. To keep up with the restaurant feel of these potatoes, we also love to pair them with a great steak.
