PIN IT FOR LATER!

Put your smoker to good use with these cheesy Hasselback potatoes. They are smoked in foil with garlic butter before the foil is opened and cheese is added to melt and take on that smoky flavor. The smokiness really elevates a traditional Hasselback potato, you may never go back! Everyone in your family is going to love these impressive smoked potatoes. If you want to stick to something a little simpler, Smoked Baked Potatoes are a family favorite staple.

Why You’ll Love This Recipe

  • Crisp, seasoned potatoes with layers of melted cheese and infused with the best smoky flavor are the ultimate side dish.
  • Hasselback potatoes seem complicated like something you would order at a restaurant, but they really are simple enough to make at home.
  • This side dish only uses 5 ingredients, and you’ve most likely already got them all at home already.

Ingredients for Smoked Hasselback Potatoes

  • Potatoes – Washed and dried, Russet potatoes are the best variety for this dish. Yukon Gold are another good option for making Hasselback potatoes.
  • Butter – Melted salted or unsalted butter adds richness to the Hasselback potatoes.
  • Garlic – Fresh, minced garlic adds a punch to this dish. If you don’t have cloves of garlic on hand, use 1/2 teaspoon garlic powder.
  • Cheese – Sliced sharp cheddar gives the best flavor in the opinion of our household but use your favorite, or whatever you have on hand.
  • Chives – Fresh chopped chives are the yummiest garnish for loaded potatoes.
  • Seasonings – Season with salt and ground black pepper, to your tastes.

More Optional Toppings

  • Bacon crumble
  • Sour cream
  • Crispy fried onions
  • Fresh chopped parsley

How to Make Smoked Hasselback Potatoes

  1. Cut each potato so there are about 8 slices, making sure not to cut through the bottom of the potato. We recommend placing chopsticks on each side of the potato so you can’t cut all the way through it.
  2. Place each potato onto the center of a heavy duty aluminum foil sheet about 14” x 12”.
  3. Combine melted butter and garlic in small bowl and brush it over potatoes.
  4. Wrap up foil around potato and place on the smoker for about 40 minutes or until fork tender.
  5. Remove from smoker, cut slices cheese into smaller pieces and place inside the slices of potato. Place back on the smoker to melt.
  6. Remove from smoker and sprinkle with chives. Serve immediately.

Pro Tips

  • Make sure your potatoes are a similar size so they cook at the same rate.
  • Keep the potato on top of the aluminum foil in the smoker so the cheese doesn’t melt off.

Storage and Reheating

Fridge: Store leftover potatoes in an airtight container for 3-5 days, although they are definitely the best the day you make them. Remove them from the foil before storing.

Freezer: You can freeze Hasselback potatoes to enjoy another time. Skip the final step of adding the cheese and let them cool. Once cooled, wrap individually in plastic wrap before storing in a freezer bag. Thaw in the fridge overnight and add the cheese when you are ready to enjoy them.

To reheat leftovers, use the microwave in 30 second increments until hot through. The microwave won’t give you as crispy of a skin, though, so you can also reheat in your oven at 350 degrees Fahrenheit until hot through, about 15-20 minutes.

How To Serve Hasselback Potatoes

We love adding Hasselback potatoes to any meal, especially when we can make Easy Smoked Vegetables at the same time. They are great as a side with a juicy chicken breast even on a busy weeknight. To keep up with the restaurant feel of these potatoes, we also love to pair them with a great steak.

Since we are outside cooking anyway, we love to ad some Bacon Wrapped Brussels Sprouts to the grill as an appetizer.

More Great Smoked Potato Recipes

  • Crowd-pleasing Smoked Potato Skins are a must-serve when hosting or entertaining. Crispy potatoes are topped with bacon, cheese, sour cream and green onion, the ultimate handheld appetizer.
  • Simply seasoned with salt, ground black pepper and garlic powder, Smoked Baked Potatoes are a great basic potato that you can dress up with all of your favorite toppings. Their nice crispy skin takes them over the top.
  • Seasoned with pantry staple dried herbs, Smoked Creamer Potatoes are a great side dish cooked on the smoker. Everyone will be asking for the recipe for this “premade packet” copycat!
  • Smoked Cheesy Potatoes are a cheesy holiday side dish made with hashbrowns and a buttery Corn Flake topping on the smoker. This casserole is so easy to prepare and will feed a crowd.
