Chicken Caprese is a delicious, healthy dinner recipe bursting with flavor. Grilled chicken breast that’s seasoned then topped with fresh mozzarella, a slice of ripe tomato, basil, and balsamic reduction. It can be made on a gas grill or on the stovetop with a grill pan for a quick and easy weeknight dinner recipe!

This Italian chicken caprese recipe is inspired by a classic caprese salad made with fresh tomatoes, mozzarella, and fresh basil!

It not only tastes amazing, but it’s healthy as well! You can absolutely create a delicious dish that doesn’t take much effort and have it taste as though it took hours to make.

We love pairing this grilled chicken with Grilled Asparagus and Grilled Sweet Potatoes for sides.

Everything is quick and easy, plus healthy so I feel good eating it and feeding it to my family!

Is caprese the same as bruschetta?

No, caprese is not the same as bruschetta. Traditionally, caprese is a mozzarella, tomato and basil salad while bruschetta is a tomato mixture that is served on toasted bread.

Ingredients Needed

  • Boneless skinless chicken breasts – Make sure to try and buy chicken breasts that are the same size and thickness, or pound them to the same thickness. Another great option is to buy chicken cutlets, which will cook faster and more evenly.
  • Olive oil – This will help the seasonings stick to the chicken breasts.
  • Seasoning – Kosher salt, black pepper, garlic powder, dried oregano, dried basil.
  • Tomato – Cut these thick or mix it up and use halved cherry tomatoes.
  • Fresh mozzarella cheese – Make sure this is FRESH mozzarella. It’s the key to getting that caprese taste.
  • Balsamic glaze – You can buy it at the store or learn how to make balsamic reduction at home!
  • Fresh basil leaves – Don’t use dried.

  • Grill or grill pan
  • Grill tongs
  • Meat pounder
  • Rolling pin (to pound chicken if you don’t have a meat pounder)
  • Chef’s knife

How to cook Chicken Caprese

  1. Brush olive oil all over chicken breasts and season with salt and pepper.
  2. In a small bowl mix the garlic powder, dried oregano, and dried basil. Sprinkle on chicken.
  3. Place chicken breasts on a preheated outdoor grill or grill pan over the stovetop. Cook 3-5 minutes per side or until the internal temperature of the chicken is 165 degrees Fahrenheit.
  4. Top the chicken with a slice of mozzarella cheese and cook for one more minute.
  5. Remove chicken from grill and place on serving dish. Top each breast with tomato slices and fresh basil. Finish with a drizzle of balsamic glaze.

Pro Tips

  • Pound out your chicken breasts to an even thickness to ensure even cooking. This will help to cook them evenly rather than an uneven chicken breast with a thin side that is dry and overcooked or a thicker side that isn’t cooked through.
  • Slice the fresh mozzarella and the tomatoes thick so that the flavors stay strong with the taste of the chicken.
  • Using fresh mozzarella is the key to really bringing out that authentic caprese taste.
  • If you want to add a little more flavor, try drizzling a little pesto or extra virgin olive oil over the top of the cooked chicken breast or garnish with more fresh herbs like chopped parsley or oregano.
  • If you are making extra chicken, don’t add the cheese, tomato, fresh basil or balsamic glaze until you are ready to reheat the chicken. You want those toppings to be fresh!

How to serve caprese chicken

How to store leftovers

Store cooked, cooled chicken in an airtight container in the fridge for up to 3 days. If you know ahead of time how many chicken caprese will be eaten, only add the toppings to the number you need so you just store the plain chicken breast.

How to reheat leftovers

To ensure you do not dry out the chicken, reheat it in the oven for about 10 minutes at 400 degrees Fahrenheit with a little bit of water or chicken broth in the pan.

Add your cheese and bake another minute or two before removing from the oven and topping with tomato slice, fresh basil and balsamic drizzle.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 Tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • 4 thick slices of ripe tomato
  • 4 ounces fresh mozzarella cheese sliced into 4 slices
  • ¼ cup balsamic glaze or balsamic reduction for drizzling
  • ¼ cup thinly sliced basil

Instructions

  • Heat a grill or grill pan over medium high heat.
  • Drizzle 1 tablespoon of olive oil over chicken breasts and season with salt and pepper.
  • Mix together garlic powder, dried oregano and dried basil. Sprinkle over the chicken.
  • Place the chicken on the grill or in the grill pan. Cook for 3-5 minutes per side, or until chicken reaches an internal temperature of 165 degrees Fahrenheit. Cook time will vary depending on the thickness of your chicken breasts.
  • When chicken is done, top each chicken breast with a slice of mozzarella cheese and cook for 1 more minute or until cheese is just melted.
  • Remove from heat and place chicken breasts on a plate. Top each breast with 1 slice of tomato, thinly sliced basil and salt and pepper to taste. Drizzle with balsamic glaze and serve.

Tips

  • Pound out your chicken breasts to an even thickness to ensure even cooking. This will help to cook them evenly and a thinner side won’t be dry and overcooked or the thicker side won’t be cooked through.
  • Make certain to slice the cheese and the tomatoes thick so that the flavors stay strong with the taste of the chicken! 
  • Using fresh mozzarella is the key to really bringing out that Caprese taste. 
  • To make a balsamic reduction, simmer 1/2 cup balsamic vinegar over medium heat until it has reduced by 1/2.
