Why You’ll Love This Recipe
- It really doesn’t get any simpler than this 4 ingredient dish.
- The natural sweetness of the carrots is enhanced by grilling and perfectly balanced when you season them with salt and ground black pepper.
- This is such an affordable dish!
Ingredients for Grilled Carrots
- Whole carrots – Since the carrots will be going right onto the grill, peel them and leave them whole. Try to use medium to large sized carrots that are uniform so they cook evenly. Check out your local farmer’s market for purple carrots to add a little extra color to this dish.
- Olive oil – We love the flavor of olive oil, but you can use canola or vegetable oil if that’s what you have on hand.
- Seasonings – All you need are salt and ground black pepper for the most flavorful grilled carrots.
How To Grill Carrots
- Place carrots into a casserole dish and drizzle with olive oil. Toss with seasonings until all the carrots are coated.
- Remove carrots from pan and place carrots directly on the grill grates over the indirect heat spot for 18-20 minutes or until fork tender.
- Remove from heat and serve immediately.
Pro Tips
- Serve grilled carrots with a sprinkle of fresh chopped parsley or dill to impress your guests.
- Squeeze fresh lemon over carrots before serving to add a touch of brightness.
- Weather not ideal for grilling? Move it indoors with a grill pan!
Storage and Reheating
Fridge: Store leftover grilled carrots in an airtight container up to 3 days.
Freezer: I don’t recommend freezing leftover grilled carrots. They may not have the nicest texture upon thawing and reheating.
To reheat grilled carrots, put them on a hot grill until hot through to keep them fork tender. The microwave can make them soften more than you would like.
Should I Parboil Carrots Before Grilling?
It is not necessary to parboil the carrots prior to grilling. Cooking them over indirect heat makes them less likely to burn before they are fork tender and cooked through.
These BBQ carrots have the perfect combination of sweetness and smoky char. A super versatile side that you can enjoy with all of your favorite proteins.
